Hello Tanja. I have always been geared towards self-sufficient living. I remember my Grandma's seller with enough canned goods to sustain her family for one year should the crops fail to produce enough during that time. I have approached my wife with a project to supply us and our family with food in case of economic downturn, etc. But I can't get her on board to even begin. She looks at it like that there's too much work involved for something that may or may not happen. I know it wouldn't be like when it was when most of the aunts and uncles got together to can and preserve food in mass amounts during harvest time. I don't know how many green beans, etc. I prepared as a child. But there is a good feeling that no matter what life throws at us, we had food on the table. And we could help our family and friends. Do you or anyone here have any suggestions on how to coax her to at least begin looking at building up a good pantry?

When I was a young child, my father did sausage patties with liquid fat poured over the top to help preserve the sausage for up to a year or more. His grandmother taught this to him, and the solidified fat seals the meat off from the air, which would definitely cause spoilage. Thank you for your recipes and a great video.

I would recommend cleaning the top of the jars with vinegar on a paper towel or clean cloth, to remove spices and grease, for a better chance of achieving a solid seal and killing any botulism.
