Kulfa Kheer :
Ingredients:
Milk 1-1/2 liter
Bread Slices 4
Pistachios 100 gm
Cardamom Powder ½ tsp
Sugar 1-1/2 tsp
Whole dried milk 250 gm
Screwpine essence 1 tsp
Rice Powder 4 tbsp
Silver leaves 4
Pistachios for garnishing
Method:
In a pan, add milk, sugar, cardamom powder, pistachios, rice powder and cook on low flame for half an hour.
Now in a bowl add milk, bread slices soak and leave for 1 hour.
In a blender, blended add bread slices and whole dried milk.
Then add in milk and cook on slow flame.
When mixture is thick and removes from the stove.
Add Screwpine essence and now take out in a dish.
In the end, garnish with silver leaves and pistachios.
Hyderabadi Mirch Gosht :
Ingredients:
Mutton ½ kg
Green Chilies 10
Curry Leaves 4
Onion 2
Tamarind Pulp ½ cup
Peanut (roasted) 4 tbsp
Grinder Coconut 4tbsp
Sesame Seeds 2 tbsp
Cumin Seeds 2 tsp
Salt 2 tsp
Ginger Garlic 1 tsp
Yogurt 1 cup
Red Chili Powder 2 tsp
Coriander Powder 2 tsp
Oil 1 cup
Method:
In a blender add cumin seeds, sesame seeds and peanuts to blend.
In a pan, heat oil add green chilies and fry, take it out.
Now add onion and fry. Then add yogurt, tamarind pulp, curry leaves, masala powder, ginger garlic, red chili powder and fry. Add boiled meat and cover it 10 to 15 minutes. In the end, add green chilies and removes from the stove.
Vegetable Rice :
Ingredients:
Rice ½ kg
Carrots 2
Potatoes 2
Capsicums 2
Green Peas 1 cup
Tomatoes 2
Green Chilies 10
Cumin Seeds 1 tsp
Black Peppercorns 1tsp
Coriander Leaves 1 bunch
Salt 1 tsp
Ginger Garlic 2 tsp
Yellow food color 1 pinch
Mix dry fruits 1 cup
Oil ½ cup
Method:
In a pan, add vegetables fry and take it out. Then add cumin seeds, chopped black pepper, salt, ginger and garlic. When boil comes, add soaked rice. Now let it simmer, add fried vegetables, mixed dry fruits, yellow food color and removes from the stove. Sprinkles green chilies and coriander leaves.
