Jastučići od sala - “KUVAR I JA 💙”

Tijesto:
1 kg prosijanog glatkog brašna
2 žumanjka
20 g kvasca aktiviranog u 150 ml mlakog mlijeka
1 čašica ruma ili rakije
1 žličica soli
250 ml mlijeka
600 g očišćena i samljevena sala za premazivanje
Pekmez za nadjev
Šećer u prahu i vanilin šećer za posipanje
zamijesiti tijesto od navedenih sastojaka i odmah ga razvaljati.
Premazati 1/4 sala, preklopiti i ostaviti pokriveno na hladno mjesto da odmori 30 min.
Postupak mazanja i preklapanja ponoviti još 3 puta.
Nakon što tijesto odmori posljednji put razvaljati ga i rezati kvadratiće te po želji nadjevati. Ako želite možete ih ostaviti i neutralne - takvi su odlični uz mezu. Pecite na 180-200 dok ne porumene.
Meni su ipak draži slatki - i mrvicu dajem prednost onima sa pivom. Ipak Patin “Kuvar” se i ovaj put pokazao odličnim saveznikom pri odabiru vrhunskoga recepta koji jednostavno odolijeva protoku vremena. Fat pillows - "CHEF AND ME 💙"
p. 519.
Dough:
1 kg of sifted smooth flour
2 egg yolks
20 g of activated yeast in 150 ml of lukewarm milk
1 glass of rum or brandy
1 teaspoon of salt
250 ml of milk
600 g cleaned and ground lard for coating
Jam for filling
Powdered sugar and vanilla sugar for sprinkling
mix the dough from the above ingredients and immediately roll it out.
Spread 1/4 of the fat, fold and leave covered in a cool place to rest for 30 minutes.
Repeat the process of smearing and overlapping 3 more times.
After the dough has rested for the last time, roll it out and cut it into squares and stuff it as desired. If you want, you can also leave them neutral - they are excellent with mezu.
Bake at 180-200 *C - until nice and golden.
I still prefer sweet ones - and I slightly prefer those with beer.
Nevertheless, Pata's "Cook" proved to be an excellent ally this time too when choosing a top recipe that simply resists the passage of time. I hope that in the next episode I will encourage myself to make some salty food.
