Steam dumpling is very good, but this is just unmatched for me personally. The crispy bottom and soft top are phenomenal. Had to do a bit of editing cuz it kinda confusing to read sometime.

This looks so good i gotta try it, ive always just thrown them in with about a tablespoon or two of water, oil, and butter (all together while cold so it doesnt spit when adding). Water creates steam (cover with a lid), butter adds a nice sear and flavor, and the oil helps keep the butter from burning before they are done. Add whatever spices or seasonings i want about halfway into the cooking so the dont burn and its perfect crispy dumplings every time

I like using Ponzu, sesame oil, chili oil and mirin for the dipping sauce. It has no chunks, but has a nice rounded light flavor.

I buy frozen gyoza from the Japanese food store and the cooking instructions are similar except no oil when frying and just add plain water.

In Japan it’s called hanetsuki gyoza. I know those are mandu but if done with gyoza that’s what it is.
