This cake takes time! But it is worth it! There was another charity bake sale at work for Ukraine and I wanted to make something Ukrainian. I did my research and this cake was born. You can replace the cashew with other nuts, but I wanted to stick to the original recipe.

Ingredients (for a 22 cm cake):
Cashew meringue
- 6 egg whites (kept on room temperature for 12-24 hours)
- 250 g sugar
- 1 sachet vanilla sugar
- 60 g flour
- 180 g cashews
Charlotte butter cream
- 6 egg yolks
- 160 g sugar
- 160 ml milk
- 1 sachet vanilla sugar
- 250 g butter
- 15 g cocoa powder
