I Love you two and since quarantine, I have been learning to ferment. I just started a Nukadoko yesterday, and am so excited to try new ferments. I am dying to go to Japan to eat and see everything, and talk to everyone willing to talk to me!

My wife will be in Kyoto in February for the Ikenobo World Seminar for a couple of weeks of hands-on ikebana workshops. She tells me she has no interest in tsukemono. :( Even though I am not accompanying her, I watch all your videos because they are entertaining, calming and charming. I wish you both well.

Hello Shinichi and Satoshi! These are great treats from Kyoto! I wish I could try every single thing! A couple of years ago, I watched a documentary about a small shop that makes senmai zuke, and how they do it. They gave it so much special care. I would especially love to taste it! I hope you will go back to Kyoto one day. I think that's a great idea. Thanks for the video!

That red furikake is amazing. We buy a big stash whenever we're in Kyoto. Unfortunately it doesn't have a long shelf life so we've been refrigerating our bags. It seems to last longer that way. We've been using it in our spam musubi's too.

I'm so glad that Satoshi mentioned about his research eating senmai zuke with prociutto! Although I've never tried that combination, nor have I had actual senmai zuke (only regular pickled sliced daikon haha) I have had it paired like a sandwich with Korean-style smoked duck! Highly reccommended!! :))

Buying these high quality tsukemono from specialty shops makes all the difference. It's more expensive this way but so worth it as many pickles that can be bought at the grocery store are too salty.

Aloha from Maui! I absolutely have to agree with you about that furikake. We went to Japan with our students in June and found that exact furikake in Arashiyama (near the bamboo forest). Like you said too, you can taste the samples. I didn't even want to go in simply because they were hocking their samples on the street but I'm so glad I did (that and they had curry senbei....those things are bomb too!) Since then, we've been asking any of our friends to let us know if any of them are going to Arashiyama in hopes they could snag us a few bags. We found them online but they're super expensive! Shinichi, best wishes for your mom. We noticed you were on Oahu the same time we were last month. My wife's family lives near your sister (we immediately recognized the area.....for the sake of not giving the location away, they live on the otherside of that mountain....lol). Our kids watch your videos too and said that they'd want to get a picture with you if we bumped into each other. Keep the videos coming! If you folks are ever on Maui, let me know! We'll gladly help you guys eat all the food here! お元気で!

I love tsukemono! When I was at Nishiki market I wanted to buy so many things. One problem was that some of the really good fresh ones have to be kept refrigerated so you can't take them back with you unless you use an ice pack. One of my favorites is the Kyoto specialty of the red sliced kabu. Oishii!

I would try all of them, apart from the small fishes one, they make me squeamish lol. I will definitely buy some picked vegetables, in one of the many Japanese groceries, and delicatessen stores we have here in London.

ohhh I want to try that yuba!!! I love the traditional tsukemono shops with the big wooden vats. My favourite tsukemono is probably rakkyo. I can eat that with anything or just as snack with a drink hahaha And I love takuan. But many other tsukemono are tasty as well, on rice or as a small pallete cleanser in your bento. I heard that in the kurama area north of Kyoto they are famous for the sansho tsukemono. Also the area looks beautiful. Perhaps an idea to go there sometimes ^.^ And an idea with tsukemono; try making chahan with it. I always make takuan chahan with just egg, the takuan finely chopped and some chopped green onions, but probably works with other tsukemono as well. The chirimenjako sansho is perhaps good as a dressing for like spinach or komatsuna.

Ohh I love Tsukemono so so much, I really have to stop myself to eat whole packages whenever I open one😂 They all look so beautiful and I bet the quality is really high from the crafting skills of the shops, really wish I could eat them right now too. Last autumn I made some Daikon pickles from my own growed Daikon, and "Senmaiduke" with Shogoin Turnip, also self growed. Even I made them with just the simplest recipe it was a pure joy, so I can imagine how your variety could taste. Thanks for showing all these amazing treats, learned some new too I have to try, thank you ^^//

I am missing Maui Brand Daikon and Umeboshi, do you ever make them at home? I need a good recipe for them being that I am in New Mexico (the Southwest) and I cannot get them here. I think I can make the Daikon but I don't know about making the Ume'. Can you recommend a good recipe for these yummy goodies?

The stores are Daito (senmai zuke) , Taiyasu and Nishiri for the others. The Furikake was from Ochanoko saisai. I hope this helps

I've taken tsukemono back to Europe with no problem but you have to check if you can import vegetable products. But you have to put it in your suitcase, because there is some liquid in the bag. But check beforehand how you have to keep it. tsukemono freshly bought in a tsukemono shop often has to be kept in the refrigerator and are quiet perishable. the tsukemono in the supermarket are usually unopened okay to take with you and keep longer, but after opening keep in refrigerator.

that last pickle may be a turnip? not daikon. One of the three most famous Kyoto pickles is senmaizuke. The real senmaizuke uses Kyoto’s huge turnip called Shōgoin kabu (聖護院かぶ, Shōgoin turnip), which is a local vegetable of Kyoto. It is a very large turnip and its diameter is about 18-20cm (7-8”). The flesh has a fine texture, sweetness and is slightly slimy.

It would be helpful if you spelled out what you are eating, list them in the notes and read off all the ingredients or how to identify if a pickle has MSG. Less time raving about how good it tastes, but more details about what you are eating.
