I know trent doesnt allow tropes for the kyrie, bur would this be allowed for rites such as the use of sarum? Especially as the gifts are prepared during the kyrie?

Tropes are added verses and/or melodies to an existing piece of music. So, here the "core" text is "Kyrie Eleison 3x, Christe Eleison 3x, Kyrie Eleison 3x" while other text and melodies are added. This was a common practice before the Council of Trent if I am not mistaken.

This is wonderful, but I wonder how you were allowed to sing it with tropes, as this was prohibited by the Council of Trent?? What rite of Mass was this?

It is not forbidden for eastern and mozarabic liturgies
