ভিন্ন ভাষার শব্দ তাই উচ্চারণে variation থাকবেই। আরবী শব্দ “ফালাফিল” (فَلَافِل) থেকে অনারব উচ্চারণে “ফালাফেল” বলা হচ্ছে। শব্দটির উৎপততি interesting আরবী ভাষায় “মরিচ” কে “ফিলফিল” (فِلْفِل) বলা হয়। ব্যাকরণগত ভাবে এই “ফিলফিল”(فِلْفِل) শব্দের বহু বচন হচ্ছে (broken plural) “ফালাফিল”(فَلَافِل) । এই শব্দটি “মরিচ” থেকে আসেনি। শব্দটি আসলো কোথা থেকে ? এটা অজ্ঞাত এবং বিতর্কিত। প্রচলিত ভাষ্যমতে এই খাবারের উৎপত্তি হয়েছিল মিশরে। আরবী ভাষায় “শিমের বীচি”(beans) কে “ফুল” (فُول) বলা হয়। এর বহু বচন হচ্ছে “ফুলাত”(فُولَات) ! আমার ধারনা শব্দটি একটি আরবী বাক্য থেকে আসতে পারে فعل الفلان في الفول (ফা’আলাল ফুলানু ফিল ফুল) অর্থাৎ “কেউ শীমের বীচি দিয়ে কিছু একটা করেছে”। মটরশুটির বা ছোলা দিয়ে ডুবো তেলে ভাজা খাবার।

Adnan bhai, best hummus is at Hashim in downtown Amman, Jordan. And, to sample real Qatari food where Qataris go, you need to go to Sassna, Barahat Msheireb street, Sikkat Al Maiz، Doha, Qatar. Your wallet will suffer though!
