Nutritional Value
Amaranth leaves are nutritionally similar to beets, Swiss chard and spinach, but are genetically closer to their wild ancestors and offer a far superior source of carotene, iron, calcium, protein, vitamin C and trace elements.
Ingredients :
1 big bunch of chopped Red Amaranth (Lal Math)
1 tbs Oil
1 tsp Cumin Seeds
4 finely chopped Garlic
1 medium finely chopped Onion
1 cup chopped potatoes
Salt as per taste
1/2 tsp Turmeric Powder
1 tsp Red Chilli Powder
Preparation :
Heat 3 tsp Oil in a pan
Add 1 tsp Cumin Seeds (Jeera)
Add 1 tsp finely chopped Garlic
Let the Garlic be light golden-brown
Add 1 medium finely chopped Onion
Add 1 cup chopped potatoes
Add Salt as per taste
Add 1/2 tsp Turmeric Powder
Add 1 tsp red chilli powder
Saute and add Potato, cut into small dices Cover and let it partially cook
Add chopped Amaranth Leaves
Cover the lid and let it nicely cook
Turn off the heat and sabji on a serving plate
Enjoy Super Healthy Lal Amaranth & Aloo ki Sabji with Dal & Rice
