FYI Hi Guys, Laab is the national dish of Laos (don't let other people claim it :), and yet some of us do not know the meaning of "Laab". So, just so you know I would like to tell you a short story that my grandmother told me about the "Laab Dish" :). Laab does not mean "to mince". To mince is called "fuk" in Laos. This is why we say "Fuk Laab = Mince the meat for a Laab dish" or "Maa Fuk Laab Choi Dae = Please come and help me mince the meat for the Laab". Laab comes from the Lao word "Choke Laab" aka "Choke Dee" which means "Luck or fortune" in English. We, the Lao People, usually cook and serve Laab dishes for special occasions such as welcome parties, Lao New Year, housewarmings, weddings, and most importantly the Baci Su Khuan Ceremony. Laab is considered a lucky food in Laos, so it is served on these occasions, so people who eat it will get lucky. According to my grandmother, who is now 103 years old, she said, in the olden days, Laab was usually prepared using fresh raw meat, mostly deer meat (aka venison) or other big game meat from hunting. When the Nai Phaan "the hunters" went out hunting in the jungle and if they were lucky that day they would get their prize animals "their Choke Laab or Laab in short. When the hunters carried the animals to the village, the villagers usually said/shouted to them "Jung maan choke laab choke dee noh = Wow! you're so lucky" or "Jung maan laab paak noh mue nee = (laterally) means your mouth is lucky today''. So, when they went home to their family they would always make Laab dishes to celebrate their lucky day. Hence, the Laab dish was coined. P.S. Good Job, Chef Saeng!

Dude, I am so glad to see someone finally get this one right! The other variations I've seen on KZbin might be tasty, but they don't really represent the authentic dish. I didn't know about the bile, as I learned to use a lot of lime and peppers to chemically "cook" the beef. Interesting! I'm used to having some sticky rice with it as well.

I don't fear this dish and am not ashamed of it. I always order this every time we go to a Lao or Thai restaurant. I choose this over Pho. Order it with papaya salad and I tell the chef to make it as hot as they can!!!!!!! When Covid hit, I went back to eating like our ancestors and the weight came off so fast in a year. I minimize the American diet these days and try to incorporate more South East Asian foods.

I’m Lao and I I wouldn’t feel comfortable making this dish with any beef from the grocery store. My parents only made this when they butchered a cow. Or maybe get a tartar quality meat from the butcher.

Ahhh this takes me back to my childhood! I was never allowed to eat it raw so my mom would cook it for me and it always tasted soooo delicious!

I wish more restaurants served this! I’ve only had this once as a kid in CA, and I’ve never been able to find it since. I’ve had fully cooked chicken laab, but it’s not the same. Thank you for this recipe! Now I just need to figure out where to get beef bile lol

I was the same way with raw beef larb as a kid, but as soon as I got into my teens, every weekend we went to the only Lao family owned shop we know of which was like a 45minute drive on a good day. Now they moved to a closer but toll ridden way it’s a love hate relationship with raw beef larb❤😂 now I’m definitely going to try making this, as soon as I find beef bile!

Lao food we put that on everything..especially with fresh organic .herbs and sticky rice..our lab is the best especially our Tom papaya

How she Lao and have never tried raw larb. Khon Lao Balm (fake Lao). I'm teasing. Great video! Thank you for sharing. My preference, I prefer cheaper cuts of beef like round eye. Since the beef is already raw, we don't need it any more tender, it's too soft and mash potato like. I like the translucent, chew and the tougher texture of cheaper beef cuts when raw like this. Give it a try! might like it.

The first time I had this was at a baci celebration for some of my family, and it was the first time I had Lao food, and I wasn't warned about the bitterness, nor that it was bile that causes the bitter flavor, lol,

When I worked in a slaughterhouse the bio is connected to the liver. It was also a hazard if popped. That’s what I don’t understand because I love larb 😂. The QC’s even collected barrels of them. I found out what it was because it popped into my mouth. So bitter I had a little spaz attack. 😂😂😂

do you know any jeer jerky venison dehydrator recipes from 🇱🇦? A friend of mine that was laos gave me a taste of his jerky deer and it was so good i been trying to hunt the recipe down. All i can say it had an light sot sauce taste which was rare to me for deer jerky also it looked like it was dipped into oil versus the usual dry jerky look

I love thoes thing , but i am not add beef bile in to it, some Kh people eat that too, but I'm not, May i ask you the next time make laab raw blood duck, how to mix water+ fish sauce to mix with blood, i want to know the portion of part water and part fish sauce, every body confusing me, some put 4w/3f, some put 6 to 3, 6 to 4 some 6 to 6, tell me what exact mix the best please friend, i will appreciate for that or reply below my comment please, thank s 🙏👍👍.

I tried this recipe but I used the padek bottles and bile from the Asian stores , so why is it not killing the raw taste?? But it’s bitter and salty and not right ?? What am I doing wrong ??

It doesn’t kill the raw taste. Lime does. The acidity from the lime juice cooks raw meat. The bitterness is coming from the bile, it does that. It’s an acquired taste. Too much Padek can make it salty as well. If you’re not a fan of bitterness then don’t use bile next time and cut back on the padek.

Yes. My family and I buy my raw meat from a butcher shop. Don't buy from the package ones, I don't feel comfortable with packaged ones.

I heard raw beef has a lot of high proteins. I came from big family but half of my siblings don’t eat raw Laab Dip (meat). We put 3- 5min in microwave bf we eat them. Surprisingly,it turned out pretty,D,good. Love ur show.

The beef bile gives a bitter taste to the dish which vinegar really doesn't replicate. You can do the dish without the bile if you can't find it but you'd be missing another dimension of the dish.

Raw larb is the best way to go if you really want the full flavor of it. I steer away from the bile juice though. I like mine sour, not bitter.

You can blanch (quickly boil) the sliced beef in boiling water for about a minute then drain the water. You can even season the water with aromatics like crushed lemongrass stalk and kaffir lime leaves while the water is boiling. I prefer cooked beef myself in this dish
