Sir, I want to thank you for make this video. I was in the electric potential mapping lab today but during the lab, I was very confusing with the direction and polarity of the charges. All professor should demonstrate just like what you did. It really helpful!

"Semiconducting paper" is not everywhere common. As a substitute consider using either A) a shallow tray filled with salty water, or B) a patch of damp earth outdoors. For A) you need to think of a way to mark the points and lines.

Shouldnt the net electric field be moving towards the low end on the first experiment? Why does it move upwards towards the high end?

By cookie sheet I guess you mean aluminium foil. Aluminium has so low resistance that it is impractical to set up a 10 volt potential difference because the power supply would just go into current limiting. The foil surface develops a thin insulating oxide layer and the two conducting strips would need to be tight enough to pierce it uniformly.

why is the reading in the origin, 5 volts? how do you determine the voltage reading in different areas or points? no access to these tools, online class sucks.

what is the importance of tightening screw, why does it matter so much? Theoretically, only a physical contact should be enough,isn't it?

Physical contacts are ohmic, they follow the rules of resistors, so if any minute patch isnt in contact it represents a parralel path that current can't take. That current distributes elswhere and you get irregularities in amperage which manifests here as dips and bulges in the measured voltage.
