Why write agains the styrofoam? Is it simply for the ease of pinning it down?

Yes. It's not really styrofoam but a museum quality, non-acidic, foamcor which is tougher and better to write on. It's also just a better to write it when its taught so it doesn't wrinkle as you write on it.
