Yeah that's a reason why I like this channel a lot, not gonna name people but certain channels that are professional chefs act super childish and just cringe for no reason. The home cooking channels are a lot better imo.

This is really cool, I love doing little experiments like this too. It’s pretty interesting what kinds of flavors you can produce with fermentation. I’ll have to try this one out!

You can ferment anything, from oats to chickpeas or lentils to nuts. Fermented pinto beans cause no gas. Revolutionary!

Hey Man, found you on reddit had no clue you could ferment with a vacuum seal bag this is awesome. I do this same type of thing(salt and d vinegar) when we make salsa from our salsa garden but just in a mason jar. Will deff be looking up more tricks from your channel.

Do the cranberries taste salty when you use them? I've tried lacto-fermenting fresh berries in jars (using 1 Tbs pink salt per 2 c water) and the juice is salty.

Ethan, did you score a vacuum sealer? Does this presage an upcoming binge of sous vide? Should Guga get worried? The more you demonstrate the lacto fermentation the less mysterious and more approachable it seems. My problem is that there are only two of us in the household and my ambition often outstrips our ability to eat everything I want to make, but with the fermentation that shouldn't be an issue. All the best!

Haha I may start some more sous vide things! I actually did goose breast and legs in the sous vide for our christmas meal. I'm right there with you, I've had some ferments in the fridge for several weeks that I haven't got around to eating yet. Happy New Year John!

Avoid combining bananas with foods rich in antioxidants (like cranberries), because bananas have a high oxidative load that neutralizes the antioxidants. Consume them in separate meals.
