For the parmesan
Courgettes (cleaned) 600 g
Stale bread crumbs 200 g
Thyme 6 sprigs

Grated Parmigiano Reggiano 100 g
Grated pecorino romano 100 g
Smoked scamorza 370 g
Rolled bacon (thinly sliced) 250 g
Extra virgin olive oil to taste
