Ive made a lot of tikka masala recipes and I found this one last year and it was BETTER than my favorite Indian restaurant. Seriously done sleep on this! I come and remind myself how to make it everytime I want it again, which is at least every 3 weeks! Great job!!!! 👍
@leangrypoulet7523 Жыл бұрын
Are you sure it’s an ‘Indian’ restaurant? Certainly if you’re from the UK? Little known fact, but whilst many say they’re going for an ‘Indian’, the vast, vast majority of so-called Indian restaurants are actually Pakistani or Bangladeshi owned/run. My immediate next door neighbour in the UK who ran (still runs) our local curry house for 40 years told me this factoid. Despite calling himself ‘Ken’ he was actually Bangladeshi. So, in the UK at least, or unless you’re absolutely certain, better to say you’re going for a curry or to a curry house, than an Indian. And if you want outstanding ‘Indian’ curry, head to Southall in West London. Outstanding, authentic, cooked for Indians curry. 👍

@@leangrypoulet7523 thanks for the input 😊 I live in the US but what Ill typically do is find chefs or home cooks online that cook dishes their region and then Ill go to the international grocery and collect the ingredients to make myself. When I go out to eat and notice something Ive made and liked, Ill try it. Not gonna lie, usually I prefer to make it at home. Im so disappointed when I get bland food thinking thats what the majority palates want.

I made this the other day for guests and everyone loved it, even the 5 year old. I freshly ground some of my spices, didn't have Kashmiri so I used regular chili powder. I made it using 3lbs chicken breast cut into huge chunks, "because I like it that way", and tripled all ingredients EXCEPT lemon juice, salt, chili powder, and used one giant red and one large Vidalia onion. It was freaking delicious and the house smells like a home for once.

U can use the putter layers of the onion and one or 2 small tomatoes seeded for the part at the end, and that is a bay leaf at the end. You can buy cumin, coriander, regular red chili powder, blaxk pepper, cinnamon stick, and whole cloves in the spice aisle, and heavy cream in the dairy at any supermarket. You will most likely need to go to your local Indian or South East Asian market for the ginger garlic paste and garam masala and all of that. Garam masala is just a spice blend mix. Yes, you need two types of cardamom. Spoon=whatever mwasuring spoon you have, just measure everything with that spoon. I used a tablespoon. ALL OF YOU ARE WELCOME

Great recipe! Note that chicken should marinate in the fridge for safety - which might take more than 3 hours. The dish in the cover photo has more color? I'm adding sweet red peppers and paprika to the sauce for color and sweetness ... also, I prefer ground cumin rather than seeds, so I don't have to filter the sauce after blending - leaves it thick and creamy. 😋
@aminy233 жыл бұрын
Kashmiri red chili powder is exceptionally red, this is what is authentically used to make this dish colorful. If you don't care about color, it's not a big deal. In the US, and likely other western countries, boneless chicken thigh is a great alternative for the breast. In India, chicken is traditionally washed at home and then marinated in yogurt, ginger, garlic, and sometimes added spices or colors. American chicken is washed at the factory, and usually has a disclaimer showing it has some retained water in its weight. Chlorine, TSP, or other chemicals are added to keep it odor free and hygienic. Yoghurt tenderizes chicken breast, but chicken thigh is extremely tender. Ginger/garlic removes odor, but western chicken is washed and hygienically packed so it's almost odorless if fresh. The color of the chicken isn't noticeable when it's completely coated in curry. Just add all these ingredients to the curry instead. Instead of cream and yoghurt, I use sour cream which is basically yoghurt made from cream.
