I have not used "Commercial" curry powder for 45 years. I grind my own. But I always take the view, that, considering the population of the Indian Sub-Continent, someone cooking dinner there has the same ingredients as me. AND then just go for it. It may not be "Real" in some peoples eyes. But it was good and fresh and nutritious. It always is. Best YT Vid I've seen Re. Curry. I will Subscribe 'cos at 70 yrs old, I still have a lot to learn.

I bought the chicken thighs, and they're marinating in the spices and yogurt marinade now! I'm almost done using up that pre-made garam masala powder (purchased a couple months ago before learning how to make it) and as soon as its done I'll be using one of your recipes to make some homemade! Thank you so much for taking your time to teach us how to make tasty meals! Since the chicken thighs I purchased had bone, I separated the bone and the meat directly on it and the chicken fat and am making a chicken broth from the leftovers in the crockpot/slow cooker for future meals! I'm going to go ahead and marinate the chicken thigh peices for the full 2 hours, or even for a few extra. Its just after 1 AM and I only got around to beginning to put this together (had a bad day and didn't want to start it until I felt better, I'm not tired so I don't mind). I'm looking forward to having this for breakfast! ALSO, I just got a package of dried chickpeas so I am going to look at one of your other recipes with that soon!

As a westerner I learned to cook this from my Indian wife’s family chef. He taught me to always char the chicken in the oven rather than frying. Marinate them in spiced yoghurt and then place chicken pieces on baking tray greased with butter - and this helps increase the charred butter tandoori style flavour even in a conventional western oven.

I was looking for the perfect Chicken Tikka Masala recipe to get that amazing taste i get in indian restaurant i'm glad i found you video thank you so much ! I'll definitely follow your other recipes ❤️ but is it okay if i don't use kasuri methi ? Or is it a need to get that amazing restaurant style taste ? Because where i live they don't sell it sadly.. Also, what's the difference between the spices "Tikka Masala", "Tandori Masala" and "Nihari Masala", isn't masala the same spice? Are they different ? Thank you very much 🫶

The proportion of spices for each masala is different and the method of cooking each dish is different. Kasoori methi is very important for tikka masala. Have you checked on Amazon for kasoori methi

Very good, I saw that you added tomato late on in the process - that is a good tip as they can go bitter - I find. Also a good tip is to crush the methi - thank you..... Been making this since I lived in Hong Kong in my 20s and earnt to cook Indian food in a restaurant we used to go to after work......the owner used to add a spoon of vinegar as well as lemon juice and he marinated it overnight. The ginger garlic paste really is the key - you used a lot of garlic - this gives that Indian restaurant hit I think! Thanks for sharing!
