Me thinks putting the Dutch oven in the oven would have been a more fair fight. Heat from all directions vs heat from one just isn’t fair.

In some parts of the world scorched rice is known as socarrat, it's cherished. So, don't worry about it, until you've to rinse it properly 😃. You've to make Jollof rice with it.

i use a basic rice cooker to make chicken biryani quite often. its one of my favourite meals. i brown the meat in a fry pan first then toast my whole spices before adding it all to the rice cooker

To overcome that sticky, burnt bottom in the pot, cook the lamb as normal then transfer the curry into another pot that has thinly sliced eggplant at the bottom, which will prevent the black, burnt sticky stuff at the bottom of the pot. The purpose og the sliced eggplant is to keep the lamb curry and rice of the bottom of the pot but still cook the biryani.

Did this in my Instant Pot Pressure Cooker. Came out beautifully tender, flavoursome, and delicious in half the time of the Panasonic Rice Cooker. @MarionGrasby, do recipes in the pressure cooker please.

someone already posted it: Instant Pot Mutton Biryani... by Sandhyas Kitchen, but she cooked the rice separate. Same channel posted Instant Pot Chicken Pulao, and she cooked the rice with the meat

Dear Marion, I hope you see this so you know how helpful your channel has been. I live in a small town. We have several Chinese restaurants. Last month though we went to an Asian restaurant. Now they have a large menu . It was hard for my mom to make a selection because she never heard of some of dishes. Thanks to your channel though I knew a few of the dishes and so I was able to make a choice I was happy with ❣ Thank you 🥰

Mutton is the best meat for biryani, and the way to stop it catching on the bottom is to put a flat griddle or tawa used for making chapatis, under the pan. This spreads the heat evenly.

The saffron gives it some colour. If it’s not good enough for you, you can use some food colour. But not turmeric.

In a conventional Pressure Cooker, Meat will get fork tender in 5 whistles which is around 45 minutes .

For the portion cooked on the stove, we put a TAWA ( a flat utensil made of iron/ the same one used for making chapati /roti) and put the cooking pot on top of it towards the end . So that nothing gets burnet or stick to the bottom of the pan.

Place a Tawa under the pot once the rice goes in, this dissipates some of the heat and will prevent burning at the bottom

I do something very similar with goat meat, except I like to BBQ the meat or pan sear it first (ditto for lamb) :)

Hmm, maybe place the Dutch oven in an oven at 350° F to finish after the rice was added to prevent scorching. 🤔

do you have recommendations for vegetables (that would marinate well) that I could substitute for the meat?

There are different biriani recipes for vegetarian birianis. They're delicious and you can ABSOLUTELY just substitute (even frozen) veg in a biriani recipe (any chicken, lamb/mutton, beef, fish) but finding a good veg biriani recipe is probably going to be MAGICAL because the right flavors will work together like potatoes, tomatoes, carrots, and okra (bindi) which will need to be put in at a specific time. There are so many interesting combinations with other fruit and veg I've seen including eggplant/aubergines (Baingun), Zuccini, corn, cauliflower, raisens and chuncks of coconut (that seems like it would be hard). Different regions have different recipes, check them out just look up vegetarian or vegetable biriani/biryani and you will be surprised by what you find. There are even rice cooker recipes.

they both look delicious but that's kind of a weird way to cook a biryani. dont know if ive ever seen anyone dump uncooked rice and stock instead of parboiling and then layering

I think making biryani (in rice cooker) in South Asia is not uncommon, I personally cook it once or twice every year 😂
