Wraps is one of those meals which has your protein, veggies and carbohydrates in one package. It's easy to do and you can vary the ingredients to suit your taste buds.
Very often I try new recipes for my family and in this video, I planned to make kebabs for dinner. However, not every dish comes out the way I wanted it to and I had improvise to make the best of the situation. There were two things I would change when making them again.
1) The meat must be single ground like burgers.
2) We need flat skewers to hold the meat. During the cooking process, shish kebab does not come into contact with the hot metal or direct flames.
The Kebab
Ingredients:
700g of single ground minced lamb.
700g of single ground minced chicken
4 pcs of medium sweet peppers (diced)
3 pcs of Charleston hot peppers (Diced)
Handful of English parsley (chopped)
1 tsp of smoked paprika
1 tsp of chili flakes
1 tsp of caraway seeds
1 tsp of liquid smoke
1tbsp of corn starch
1 to 2 tsp of salt (To your taste)
Method:
1) In a large bowl, add both ground meats together with the peppers and parsley.
2) Add the salt and other ingredients, then mix well.
3) Keep in the fridge for 1 hour to cool.
The correct method cooking the meat:
1) Assemble the meat onto the skewers, take a handful of meat and make it into a ball, and then skew it onto the flat skewer. You will need to shape the meat into an elongate and flat patty. Leave some space on the tip of the skewer
2) Place the skewers onto the rim of a hot skillet, the meat must not touch the skillet's hot surface. The heat from the skillet will slowly cook the meat.
3) Flip the meat once you notice fat and juice start to drip onto the skillet. Once juice start dripping again, remove and check the meat is fully cooked. Let it rest for 10 minutes before serving.
Since I did not have the correct flat shish kebab skewers, I had to cook the meat directly onto the grill.
Onion Salad.
Ingredients:
4 medium red onions (Thinly sliced)
1 yellow onion ( thinly sliced)
Handful of small tomatoes such as cheery or honey tomatoes.
2 tbsp of Virgin olive oil.
1 tbsp of Sumac powder.
Salt to taste.
Handful of chopped English parsley
1 to 3 tsp white vinegar to taste. (But I prefer to use pickled gherkin's brine with mustard seeds)
Other ingredients for the kebab wraps:
1) Tortilla wraps
2) Garlic sauce.
