Amazing how the chef manages the exact quantities and proportions of the Indian spices not to mention the kind of spices he uses in different Indian dishes, like how our mothers cook out of years of experience. This shows he is totally into his craft.

Often the rhyming part is cut off as well. So you might just say "I'm going for a Ruby". My most used is "I'll have a butchers", which is butchers hook...look.

I've had a really bad one that just tasted of yogurt from a very well reviewed Indian place. It turned me off from Rogan Josh's for a long time. But I've recently had some good ones.

@@Junjun47474 yep kashmiri one doesn't use youghurt , onions ,garlic and tomato. It has flavour of kashmiri chilly dry ginger powder and fenell powder and is cooked in mustard oil and hing as well

this recipe right here is the modernized version of Rogan josh. in the original recipe from Kashmir (India), there are neither tomatoes nor ginger/garlic. instead, Asafoetida is used with a few cloves. If u want a detailed original recipe, here is the video by India's finest chef (kzbin.info/www/bejne/rp7Uaqt3h8aol8k). it is in Hindi but you can watch it with subtitles.

(like the big langustines-spiny lobster vs north atlantic lobster type of different?) prawns bigger and more in the direction of lobstery-type with well developed legs and all & shrimps mostly body etc.?. haha not to bash you. True, but some Indian chefs don’t worry too much about their dishes being too little authentic. I’ve seen Great Indian ASMR making lots of Indian curry dishes with tomatoes in them, and yet tomatoes originated in South America.

When I was in Morocco, around Ramadan, it was the soundtrack of the old town of Meknes coming from all the pressure cooker valves dancing as people were cooking the chickpeas for the Harira. Just a small suggestion... After ur done steaming the mutton and like u immediately added curd after that... Don't do that, after it is steamed, cook it on high flame with occasional stirring so that the mutton doesn't stick to the bottom. Keep high flame so that some water evaporates, and then add curd, if u directly add it after steaming, the curd will sort of lump up
