Carnet is issued on your name, so you have the sole authority to have it, no one can deny carnet not even the organizer. Just because they physically posses your docs doesn't mean that they can act like a govt entity. Only the Govt can cancel/hold your documents. Moreover, your vehicle is your private property, they are just organizers for which they are duly charging their fees. They cannot force you to apply stickers on your car just because they are organizers. They are just taking the leverage of foreign soil as you as a customer have travelled all the way from your home to a new country and now you would not want to go back, therefore, they will do such tactics. It's a common modus operandi of scam.

Bro he mostly joined them for china only because they have to compulsory have a guide , so in group travel guide cost will get distributed else it will be borne by him . And china tak ka travel max 10 days ka hain . So he has joined them . If he cancels now , His all visa will go in vain and he will have to incur those costs again .
