If you like the modern look of large drifts of the same plant, should you still do some layering with lower border plants? Struggling with that...

That's up to you. I teach cottage style garden design with mixed borders. So... Typically you wouldn't be layering to the level someone with a cottage garden would be. But again, that's up to you. Find some pictures of gardens you like and use that to decide.
