Hello,
it's been a long time since I've made sculpted fruit. As the cherry season is short, I was inspired by Cédric Grolet's recipe but I didn't use tarragon.
So I replaced the tarragon ganache with an almond ganache.
The recipe is for 8 cherries.
I used the Pavoni mould (pro size).
