Hi friends! I'm Jennifer, a forty-something wife and mother of 7 children ages 5 - 21. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.

@@acountrylife I also love finding new ways to use ingredients as the pantry gets lean... For instance, out of milk this morning, so 2/3 cup whole milk yogurt + 1/3 cup water got substituted in pancakes and they were gobbled up like always :)

Thanks for the tip on dried cranberries. You have such patience. Cereal for supper/dinner.. yum. Graham crackers for never thought of. Sounds good. I like to make a nice Greek or Middle Eastern meal for lunch during Lent. Pitas, tzatziki, hummus, olives and feta. If I feel adventurous and can find eggplants, I will make baba ghanoush as well. Persian jeweled rice also makes a nice meatless meal.

Hi Jennifer, I love the Aldi sausage rolls. I buy 3 at a time and open it up and cut 8 slices and put on wax paper and put in freezer Ziploc and freeze them. Take out 2 for breakfast, cook, sooo yummy. I actually love this better than Jimmy Dean and Bob Evans. Great haul Gives me ideas for dinner. Thank you for sharing. I'm glad you like the 4% cottage cheese better. It's a hit n miss too sometimes. I just bought some last week for a sketti bake. It was yummy this time. Luv n Huggs for everyone.

Ann Mittelstadt good morning. ☀️ I love the idea of slicing the sausage rolls. I bet they cook up pretty fast.
@nancysadewater964
@nancysadewater964 5 жыл бұрын
I slice the pork sausage rolls while the rolls are frozen (thaw them slightly enough to hold it firmly), leaving the paper on it as there is a slicing grid on the side of the packages for uniform slices. Then pop them into freezer ziplock bag and only pull what I need, pulling the paper edge off and discarding it. If I need to break up the sausage (not as patties) thawing only takes a few minutes and it is ready to use.

Love your grocery hauls! And your meal list is very helpful, as is telling us what you're using everything for..... We have two dogs, and 25 some odd chickens. Our second dog we got was a Chicken chaser. We were able to train him with an electric collar. You should give it a try. You just have to work with them for a few days. And I kid you not, he is now the best chicken watchdog! he watches out for them whenever they squawk, he runs out into the woods to make sure there aren't any foxes around 😄 Trick is, make sure you zap her soundly as soon as she stares with excited eyes at a chicken. Not just wait for her to chase it, but just giving the body language that she's interested in hunting it. And have someone holda chicken right in front of her, and make her sit there and be calm nearby, so she associates chickens with being relaxed. It will take time.

If there is anyone that has problems with cucumbers, the English ones don’t cause that. I don’t know why but they don’t. I love putting them in rice vinegar and onions. Usually made in the summer and I can’t figure out why just summer? Hmm I dunno. Happy to see you tonight. Do you find prices are better at Aldo than Fleet Farm? Packages are bigger at Fleet.

A Country Life yes Jennifer that’s exactly what I was thinking. I know the packages at Aldo are smaller than Fleet. They have quite a bit of dried fruits too. Possible cheaper cranberries? It was funny last night, I had finished my comment and hit send. Was going to ask you about the avacodos, but didn’t want to be too nosy. Then you mention Amber not putting them on the list. I got a chuckle out of that. Have a good day. A prayer for me would really be appreciated I’ve been off work all week being sick. I’m ready to go back. Thank you

It's been unseasonably cold here in Northern Coastal California, but we are looking forward to the garden. I live in a small rural town, but live in a neighborhood. We have a good sized lot and have room for a greenhouse, blueberries, raspberries in wine barrels, some raised beds and even 4 laying hens we purchased about 10 months ago. The first started laying in December and we only have one that is not laying yet. Of course they are pets and have decimated our strawberry bed. DH is going to put up chicken wire across our garden area so we can keep them out unless they are supervised! Jennifer, our little chihuahua is scared of our hens so no problem there!

Jennifer, I'm not sure if your seasoned salt is similar, but we have something called all season here in australia. I'm assuming it's similar. We like to sprinkle it on top of veges with a dash of olive oil and roast them . It gives great flavour to veges for next to no cost! You could also try cottage pie bc it's cheap? and make you own sausage rolls. (not sure if they're the same there) puff pastry with flavoured/italian or plain) pork mins wrapped up in the pastry. Filling and easy bc you just bake them for 30 mins or so. Quick easy lunch and freezabel. If I think of other money saving stuff (it's late saturday night here in Melbourne!) I'll post Maria's hair is getting long isn't it? and god bless Joe! xx Kylie (old handle was ashbananas-my daughter's- but I'm on my own handle now)xxx PS) you can buy (very v=cheaply, a hand winding machine that make zoodles from zucchini. Which will save you money in the long term to make them and buy the zucchini unpackaged/processed etc. Just look it up on amazon. Spiraliser it might be called? It works with all different stuff Kx

How do you budget for meat since a lot of it is deer from hunting? Is that a separate budget?
@acountrylife
@acountrylife 5 жыл бұрын
That's a hard question. I don't budget our hunted meat into our monthly budget and that's why I think our budget is lower than a lot of other large families here on KZbin. Meat prices really add up so when I don't have to buy 20 pounds of hamburger each month it's a huge savings.

I'm not Catholic and don't really know much about lent. Are you not suppose to eat meat during lent? Or are you only allowed certain meat on certain days? And for how long?
@acountrylife

Holly Walker During Lent, the 40 days leading up to Good Friday, we don’t eat meat on Fridays as a way to make a small sacrifice to help us rely on Jesus for our needs. That’s a very simple explanation-I hope it helps.

Hi Jennifer, in your opinion which store has the best prices, Walmart or Aldi? I've never been to Aldi but would like to go check it out if it's worth it. Thank you.
@acountrylife

Libby hands down Aldi has better prices. Remember that Aldi carries their own brand so you won’t find everything you want there. That’s why I always go to Aldi first and then finish up at Walmart.

I feel like I've been left out of something..Is there a difference in the Crisco and Manteca lard? Ive always thought it was the same thing..Do you use them for different things?
@acountrylife
@acountrylife 5 жыл бұрын
Yes there is a difference. Lard is rendered pig fat so it's an animal product. Whereas Crisco (or shortening) is a vegetable oil product. Basically the carbon chain is hydrogenated (with hydrogen atoms) to make vegetable oil solid at room temp. I do actually use both for different purposes. Baked goods will often call for Crisco. I usually use lard for browning meat and sometimes even in cookies. I don't have any hard and fast rules it's just my preference as to how the item bakes or cooks up and the flavor we're looking for.
@blessedmamahen
@blessedmamahen 5 жыл бұрын
@@acountrylife Seriously thank you so much for explaining this. I have grew up calling both lard! I have been using Crisco to fry certain things for years. I always thought my fried taters were a strange taste. I bought Manteca lard a couple weeks ago. I fried taters with it and everyone in the house was wanting more. Haha. I feel like I've been let in on a big secret.
