Congratulations to Hayden! Tiffany, just wanted to mention, in case you didn’t know…Hershey’s makes 2 different candy bars that are plant based and dairy and gluten free- regular chocolate bars and Reese’s Peanut butter/chocolate bars! Would be a great treat for Layla.

Have you tried shopping at Thrive Market for Layla. I know they have some great dairy free and gluten free options. It would save you a trip to town as well. Congratulations on having another graduate! I hope you have had the best week spending it with the people you love!

If I remember correctly the frozen sweet potato bites are kind of like a nugget and can be cooked in the air fryer. Oats can sometimes be mistaken by the body in the beginning of a gluten free diet and have the same reaction as with gluten. 😊

Happy Vacation!!!! About your oats and Layla. Most oats are processed in a facility that also processes wheat so you can have cross contamination. Quaker is one of those companies that does not certify their oats as gluten free. We buy only Bob's Red Mill gluten free oats that are certified gluten free. Bob's has built a separate facility to process all of their gluten free products so there is no danger of cross contamination. This might be better for Layla.

Also if you want to make her mac and cheese, boil her noodles save some of the boiling water before you drain it, add her cheese and nutritional yeast to the noodles, a couple of splashes of her milk, cover off of heat and the cheese will melt. The vegan cheese melts better if you cover it. The oxygen makes it where it doesn't want to melt. I used to be a special diet cook for a child care center.

We haven’t had the sweet potato bites but we have had the broccoli ones. They’re like a french fry replacement lol. They reminded me of tater tots but obviously made with other ingredients. The broccoli ones weren’t my kids favorite (even though they do love broccoli) but I enjoyed some variety. 😂 I’m so glad you had some wins with food finds.

Tiffany, I'm thankful you are finding options for miss Leighla! I'm also doing gluten free for inflammation and it's tough. I can't imagine no dairy and eggs/potatoes/chicken. I think it might even be easier as an adult in the way that I am actually okay with just eating the things that I can have and mostly Whole Foods versus processed things and snack foods. But there are still so many snacks you can have. I'm wondering if you can find a dairy-free protein powder to add to her oats it might be an easy way to get some extra protein in. You could even add it to the gluten-free pancakes! So many ideas.
