Man I’d love to taste that dish. Unfortunately I don’t have a personal chef, so 5 step, 3 hour meals (5 with clean-up) are called Thanksgiving. Too much commitment! It sounds fantastic!

Fantastic. The Vietnamese equivalent must be ca ri - using the same madras curry. I grew up eating this dish that has lemongrass and sweet potato. And fried sauce instead of soy sauce.

This is an interesting take on Macanese Portuguese chicken - sort of half way between the Macanese version and the hk cafe version (both are great). To make it more the Macanese way add Portuguese chorizo, whole black olives, bell peppers, bay leaves, and turmeric. Strangely the best curry powder to use for this I found to be Japanese S&B curry powder for it's flavor and mildness (and no it won't make it taste like a katsu curry). Like your dad I don't always deep fry the potatoes and chicken either and it's still like 90% as good. That extra step I'll only do if I'm serving it to company. I know I'm horribly biased but I think Macanese food is the greatest relatively unknown cuisines of the world and it's a shame it doesn't get more of a spotlight.

Here’s the deal. I am a pretty good home cook, and I live in the south. There is one thing that makes me a failure in the kitchen. I can’t cook fried chicken! Please show me how to do it. I’ve tried over and over again. Sometimes my batter falls off, other times the batter looks phenomenal but the chicken is raw on the inside. PLEASE HELP!!!!

Try par cooking your chicken first until it’s almost cooked. At 325F fry until close to final temp at joint - then pull out of oil. Let rest for 3-4 minutes and carry-over cook. Then drop in 375F or close to that temperature for final crisp. Double frying chicken is similar to crisping French fries - just larger. Does this make sense?
