What could I use instead of chillies? They are just something that I can't eat at all so daren't even risk adding some. Or would it be OK without any, just not hot?

That curry looks absolutely gorgeous!! 04:13 Latif, is there anywhere that sells a Base Gravy Spice Pack, all in one, rather than having to buy all the separate spices? Do you have a merchandise store, where you sell this? My problem is, it's only me in the family that really likes curry, so inwould want to make about 8 to 10 pots of Vase gravy and freeze it. I would find it easier, and more practical, to just have all the spices prepared to make the base gravy recipe easier. Can you buy Vase gravy frozen anywhere that you could recommend? (Daft question really, because you're a chef that cooks fresh, nit frozen!)

This is a Death Row Meal. You want the best food ever. Plus your Mum has cooked it. May I ask a question? Is your Mums always better? Even though you may use identical ingredients etc....You get what I am saying? I also believe that having Gas on the stove top as opposed to electric hobs makes a HUGE difference! GAS is the only way to cook. It is so much better. Hands Down!

2 years ago we remodelled our kitchen. And i made the massive mistake of fitting an induction hob. I am a very keen home cook and should have some more research. The hob is worse than useless. It seems the 2 big selling points are 1, how quick it can boil a pot of water and 2, how easy it is to clean. That's it! I do a lot of wok cooking and it's IMPOSSIBLE on an induction. Completely, totally, impossible. And steak forget it, and i don't care what pans people use. You are 100% correct. GAS is the only way to cook. I would urge any keen home cook if you enjoy cooking, and you want total control over your heat, STICK with gas. I have actually purchased a professional cast iron ring burner and a large propane gas bottle and use that to cook, albeit outside under my lean to as you cannot use this appliances in doors. A small price to pay i think.

Here in the USA mutton is impossible to find. Lamb can be found, but you have to mortgage your house to afford it. But I bought a whole sheep off a farm a month ago and had it cut and packaged at a local butcher. It is in my freezer. I am so happy. Mutton is by far my favorite meat. I made my first curry with some of it a week ago. I used your Butter chicken recipe, but with the mutton instead of chicken. It worked very well. Thank you.
