So happy to see a professional chef using frozen vegetables. One of the best lessons I got from _Modernist Cuisine_ was that canned and frozen vegetables are usually fresher than the supposedly fresh ones at the store that have been sitting in warehouses and trucks for days since being picked, while frozen and canned are packaged within minutes.

Agreed. Though the freezing process can change the consistency of the vegetable. Water expands when frozen, so things like tomatoes go a little mushy.

That pastry recipe is perfect, just made some samosas with a chickpea curry filling. I was the best samosa I have ever made. The only time I've had better was from the indian supermarket in newcastle where the owners wife made them fresh every morning.

I'm surprised filing didn't sneak out of a few of those pinched sides that opened up a bit. The first or second had a thin spot that worried me. I hope that inside dough was cooked enough. Loved the nigella. As for easy if you have leftover mashed potatoes put a bit in. Liked the dough geometry. Call mom in!

I would use his dough recipe but definitely my own veggies. Frozen limits you to the combo they have within the mix. Not hard at all to add your own Veg, but will certainly try this.

Another cracking recipe. I would really appreciate any advice you might have as to how I could make a gluten-free version. Both of my children have coeliac disease but they love samosa. Latif has just revolutionised how to form a samosa. We’ve been making these since first lockdown but we found the technique of forming the triangle with the folded ‘backbone’ then adding the filing really difficult. Your method looks so much easier and I’m looking forward to trying it. Will it work with larger samosas?
