I'm Jamaican and I loved this video. I like the idea of our cuisine being made in a different way that might even seem more accessible and less intimidating to other cultures. You did a great job...even allowing hours for the chicken to marinate which is exactly how I cook it :)

Y'all be asking her to cook different cuisines from around the world, but when she does, y'all wanna get mad because it's not how YOU cook it. Like, damn you don't have to cook the recipe exactly the way it is. I'm sure majority of y'all people commenting, cooked something before & changed part of the recipe around to fit your taste or liking. Let Laura live! Laura, you did a great job, don't worry. Btw, she did say it wasn't authentic, so y'all need to stop coming at her. It's not that serious.

As a Jamaican this looks delicious, for it to be more authentic I would use scotch bonnet instead of habanero pepper , orange juice instead of lime (I'd never use lemon or lime ) and scallion instead of onion. For the rice and peas creamed coconut works MUCH better (it comes in a block) it will be a lot more coconuty also I add thyme :) thank you for making a Jamaican dish Laura ! X

so far I've only come across recipes that use lime, even the ones that claimed to be Authentic..Orange juice sounds interesting😳! I wish I could go to Jamaica and have some real jerk chicken

As someone from the Caribbean, with a Caribbean food business (so I like to think this is one thing I know a bit about!) - I applaud you, Laura. I have been a fan of yours for years, and whilst this may not be classed as authentic, it's one of the best 'non-authentic' takes of one of our dishes I have seen online. Great video!

Hi Laura , I'm Jamaican, so glad to see this recipe and to see lots of other Jamaicans commenting :) For the rice and peas you should definitely try red kidney beans or gungo peas (not sure if you can get that in the US). Also, traditional rice and peas has seasonings in it like thyme, escallion (whole stalks of it but mashed with something hard so the oils are released), a whole Scotch Bonnett pepper, some persons also use ginger. Funny enough I just got home and planned on making this exact thing for dinner today, then I saw your video! Love from Kingston!!

As someone from a family from the Caribbean you did a great job, you can make a few tweaks here and there to make it more authentic but for your version you did a great job and it looks yummy!

Laura, I love your courage taking on these cultural dishes. Don't pay attention to the critics, its your take and don't apologize for it. My Jamaican Grandmother always wore rubber gloves when dealing with Scotch Bonnet peppers. So much better in the summer on the grill, served with rice & peas (seasoned with thyme and green onion) and coleslaw.

I boiled the coconut milk with pimentos, thyme, and a few green onions with chicken broth before adding the rice. It was so fragrant! Loved the chicken too! It's a keeper recipe. Thank you so much!

Hi Laura, I'm Jamaican. I love how u put ur own twist on the classic. how we normally eat it here is with bread, because we usually buy it from a food vendor on the street straight from the jerk pan... but u should try the kidney beans (red peas).... very traditional in Jamaica

Jerk chicken is soooo good! I went to Jamaica in 2010 and I did bring home the seasonings and marinades for jerk chicken from the locals but I ran out forever ago! Thanks! if you love jerk chicken you should pick up some Jerk Turkey at your deli counter, Boars Head usually has it! So good as well!

I think you should fly to Jamaica Laura. It's only a forty-five minute flight from Miami plus there are a million different versions. My Old Man likes it in a smoker and I marinate boneless skinless chicken breast overnight with cilantro, sage, cardamom, garlic, salt and smoked paprika. Place the chicken in a smoker all day and use Basmati Rice and Lentils for the peas and rice. I use coconut milk and mangos with crushed ice for a smoothie. But that's the way my grandpa likes his jerk chicken.

Laura you aren't using the line squeezer backward. That's the proper way to put it. You put the cut side towards the holes.

For the rice, a whole green pepper can be added, a slice of green bell pepper would be a nice substitute. We usually add a pat of butter/margarine/oil to the rice water and skellion and thyme and garlic. We really spice up our rice water for amazing flavour.

Hey Laura here is a tip used in Caribbean & African kitchens, make slices in the chicken and marinade for as long as possible, it helps the marinade go in the chicken.

When you make jerk chicken, it's best if you use scotch bonnet peppers, pimento seeds, scallions, and orange juice with ginger.

Am caribbean myself, your dish take looks great. I would say use fresh Thyme in the jerk sauce, its so much better with fresh thyme. As well with the rice dish, you can big up the flavor of the rice by adding some Thyme and Garlic to the rice. Love watching you cook.

The secret to Rice and Peas is onion soup mix and if you ever go to Jamaica you need to get some jerk spice and jerk chicken from Boston Jerk Centre it's the best!

im from Jamaica 👋👋...its like a tradition to make chicken and rice and peas for sunday dinner ....we dnt normally use sugar tho for jerk chicen but that most make it taste amazinggg ...plus for the rice we normally just pick a coconut and blend the coconut meat(the inside) with water and strain it into the pot...we then add scallions and tyme and pimento and salt and then the peas or added and this is normally placed in a pressure cooker then later on the rice is added ...after a couple minutes and the rice is cooked a plastic clear bag is place over the rice and then that's it

I recently met a woman from Jamaica and she said to go to Kingston as well. When we went to Ocho Rios we were told never to go into the city of Kingston because there's a chance to get shot or robbed. Especially with us being white people

I make this all the time BUT Only on the grill ...Garlic, Thyme, Habanero Pepper (abt 3-5), scallions, onions, salt, black pepper, all spice, granulated garlic, Sou Sauce (sometimes I use mushroom soy sauce)

I'm Jamaican,this is a very good take on one of our favorites. another thing you can add to the marinate is pimento seeds,this will add even more Jamaican flavour. for the rice you can also add thyme,escallion and a little bit of sugar :) visit us some day!

I used black eyed peas instead of kidney or pigeon peas. it was a nice substitution

and if you ever do get to do it on open fire, if possible, make sure it is a charcoal grill not gas. my dad uses pimento wood but if you can't get that charcoal is just fine. That's what most people use anyway

We carribean people never use gloves when we cook with scotch bonnet pepper. All that you have to do is wash you hands with soap after touching it and you're gonna be good.

I was thinking that with a few modifications it could be done with tofu? I'm a vegetarian too and I like to watch the meat episodes too and see if its able to be vegetarian 😊

Hey Laura. I am from Jamaica and I am about to make some Jerked Chicken legs right now. I am sure yours taste great but i wish i could send you some authentic jerk seasoning from Boston in Portland, which is the capital of Jerk. You also need a great recipe for Rice and Peas which i will send you.

The coconut rice originally comes from Malaysia it is called Nasi Lemak we eat it with some Sambal , Nuts , Ikan Bilis and fragrance fried chicken
