Laura, I really want to thank you for your videos, for some reason, I find them very relaxing to watch! I am a project manager and we are opening a shop and café next month.'ve been using another coffee shop machine to practice and as I never had experienced as a Barista It's been very helpfull for me to watch your videos. I use a lot of your tips while working. Please give yourself more credit for what you do and who you are, you clearly are a fantastic employee, not everybody is extrovert and has to speak loudly ( I am one of those, and thanks god not everybody is like me ! haha ), also I am pretty sure you are an excellent teacher as staff mostly learn by observing and you clearly excellent at your job. I live in the UK and I heard Australian coffee was the best so I shall keep watching your videos for more tips !

Trialing, something you have done hundreds of time, yet it always worries you every single time. It's funny that most of the time, how to use the machine is the issue i least worry about. I found that I have always had trouble figuring out where the stuffs are, even though it is right in front of my face. Hence, I always gets stressed on trial due to this, and when I work, everything has to be at exactly where they are supposed to be lol. It's the same at my cases, when my boss ask me how I feel about somebody who comes for a trial, I always say good things about those who looks organized (unless they know nothing and want to apply for a place that does high volume xD)

As a barista im very particular about how i like my station. I always have it organised for the highest efficiency and it is my biggest pet peeve when another barista messes up my area 😂 im going for a trial at a different cafe today and im so nervous even though ive been working as a barista for like 3 years 😂

Finding where the scissor is for the soy milk, how differently they serve the tea, the work flow, etc. may stress me out. Have been working for roughly 3 years as well, used to be in a place that do around 20 kgs of coffee a day, and I still manage to screw up several times during trials lol.

I remember when I had my trial (at the cafe that I'm working at now). It was tough at first as I was trying to figure everything out and remembering how they do things on the machine. In theory, I know what to do but putting that into practice was somewhat difficult. Took me a few months to learn everything. Definitely settled in well!

I wanted to make sure you know I like your videos. I’ve seen a few of you on the job vids and you are a hard worker. I worked at a Starbucks a long time ago but there were fewer recipes than there are now, we weren’t expected to dial in or pull ristrettos and latte art wasn’t a thing. So you totally hold your own. And yes, working with someone talented raises your game so it’s nice you and Mega can work together. I’m a musician and I find I don’t ever get lazy around other good players! ♥️

I'm glad that Rowan was behind & u bumped him. It might be a little mean, but a little laugh will actually lessen the tension level. So, all is well. xD I used to be a barista & an amateur bartender. These jobs r so stress when it's peak hour, but with the help of my seniors' jokes & silly things they do, it really helped calm me down & made me realised that I didn't have to rush everything, but do them in rhythm. I really am amazed by my seniors' effortless look when they make their drinks like they don't get overwhelmed by the amount of orders printing out from the machine. It's really crazy!

I've gained confidence and speed while being on milk. Like I mentioned last time, I use the ghost steaming method and I look at the next docket to see which milk I need to steam next. It does give me time to get the next one ready, plus I have both of my hands free. I reckon Mega did well on her 1hr trial. A few slips here and there but I reckon she'll be a great asset to the team. Wishing her all the best!
