12:40 theyre hush puppies. Basically, cornmeal balls that are deep fried. People have their own additions to the batter, such as jalapeños or onion or corn kernels, but all hush puppies are delicious. My fave is Memphis style but I grew up nearby so thats probably why. Most people enjoy what they got used to as a child. Texas is great for beef, though. I dont care for Carolina style and thats all they do around me. That and Alabama white sauce, which I also dont care for. 16:58 Masubi is delicious. 19:20 Hot dogs and burgers are done. Theyre just not called BBQ. We dont call all things on a grill BBQ. When its hot dogs and burgers, its grilling.

19:22 What you call English BBQ is just what we in the US would call "Grilling". BBQ usually uses some sort of wood to smoke where Grilling you normally use charcoal or propane as a fuel source.

Gammon would be what we call the ham in the U. S. It's either of the two rear legs down about halfway down to the feet. The pork bellies in the U. S. is where our bacon comes from. The balls are most likely hush puppies. In Georgia you can find Texas, Memphis, Kansas City and both Carolina style BBQ. My group of friends cook whole hog over an open pit or on a large smoker. We've also cooked a few hogs in the ground. Any style is fine with me. We've cooked, beef, bison, gator pork, chicken, fish and goat. And any time of the year is a good time for a BBQ.

That's pretty much it. The "styles" are fun to argue about, but if the wood isn't pine, and the critter isn't too gross or endangered, you're just inventing your own style every time. It'll be as good as any of the other styles. Orange wood goes well with manatee.

@ I smoked Cornish game hens today. You can't beat the presentation, just plopping a whole bird on everyone's plate. I usually do Caribbean jerk seasoning for poultry. It's not a style; it just turns out that the womenfolk are really happy to tear a small animal apart, so I cook it.

Mustard base BBQ sauce is actually pretty good. I like all kinds of BBQ sauces, and it's cool to change it up sometimes. When you say that the UK usually features burgers and hot dogs and wings at your BBQs, the reason your choices sound different is because you misuse the term BBQ in the UK. What you just referred to, we would call a Cook Out and it uses grilling. BBQ in the US doesn't just refer to the food but the type of cooking employed. Grilling at a cook out is fast cooking at high heat and can be open flame. BBQ is typically done in a smoker, at low heat and it's slow cooking. If we were doing a back yard cook out, we might also just do some grilling and do some burgers and hot dogs, maybe some chicken or even some steaks, but it wouldn't be BBQ.

The "skin" you're referring to is what we call Bark. It's not burnt or crunchy. It's the product of two chemical reactions between the seasoning rub, lower temperature heat, rendered fat, the smoke and the meat itself. We get the Maillard reaction (amino acids and sugars within meats cause browning when subjected to heat) and polymerization (rendered fat and seasoning from more complex molecular structures under the influence of heat.)

In your country and in many places in the US, BBQ is a verb. But in the places where BBQ is really a staple, BBQ is a noun.

In the US Grilling and Barbacue are two different things. You grill burgers and hotdogs but it’s can’t be called bbq. It can only be called bbq if it’s smoked meats.

Right, what the UK most often calls BBQ there, we would just call a cook out. At cook outs we typically grill, burgers, hot dogs, maybe chicken, or a steak. But it's not BBQ. It's fast, high temp and direct heat. BBQ is typically done in a smoker, low heat, slow cooking, indirect heat.

Backyard BBQs are pretty common in several regions of the US. Without smoking anything, where there is no culture of smoked meats. I can see were it would be different in the south where you would see both. In the other areas BBQ ribs and other things are at a BBQs. Not smoked. We always called them BBQ's all the way back to the 1950s and earlier. No smoked food at all. It's just regional language differences. As Southern style and smoked meats have moved north, the lexicon is changing. But even having moved into other northern states (east to west) it's still called a BBQ. If you look up Barbeque in the dictionary, it's a term for both examples.

@@fermisparadox01 ... That's not necessarily true. There are several organizations now in the UK that are trying hard to bring US BBQ traditions and cooking styles to the country. Chuds BBQ here in the US, which has an excellent YT channel, made a trip over there to attend one of their BBQ festivals and while there, did a seminar on how to cook BBQ. It's a pretty interesting video, you should check it out. So, while I agree with you, it's not widespread over there, there are some guys trying to make it a thing in the UK, which is good for them.

​@@rhiahlMT Yeah, lots of places that don't have BBQ call grilling BBQ, but language differences aside, the cooking method being used is grilling. When talking about gatherings of friends grilling meat I tend to think of BBQ being a noun, like "We're gonna have a BBQ." When talking about the cooking method itself, I tend to think of BBQ meaning smoking. You don't BBQ a hotdog, but you can grill a hotdog at a BBQ.

So what you described with having burgers and hotdogs. Is often called a backyard "Cookout" here. The food found at these Cookouts vary depending on your national heritage and amount of effort put in but you will most likely find both burgers and hotdogs. But for example. If you live in California there is a possibility of tacos because of the Mexican culture there.

There's a huge ranch Harris Ranch in Central California in Coalinga, CA. They built a steak house next to the 5 freeway (Harris Ranch Prime Steakhouse) right next to the cows you see (& smell) driving by on the interstate. Great eats!

Americans are so blessed by are country of imagrants that bring there flavor and cooking techniques from their home countries and the techniques get mixed in with other countries flavors its such a blessing to be so lucky to have flavors and techniques from all over are the planet

Bark is formed by the brisket sweating (which is where it will expel a small amount of liquid to the surface) which mixes with the salt and pepper that itself has been infused with smoke. The brisket will then pull most of that mixed up moisture back into itself but a thin film will remain that then dries. This happens again and again over the 12-16 hour cook. All of those layers add up to the bark. And the smoke ring inside the meat... that is from the moisture being sucked back in. The deeper the red mark, the deeper the smoke flavor penetrated into the meat. Basically, the longer the smoke, the more bark and deeper the smoke penetration.

Hot dogs and hamburgers are not barbecue. They are just hot dogs and hamburgers. People will have hot dogs and hamburgers and barbecue at their barbecue/cook out though.😊

Central Texas here. Good smoked brisket absolutely doesn't need sauce. Now I did live in South Carolina, and theirs isn't something to sneeze at. But I'm definitely a beef brisket gal.

You're gonna have to try the trotters, the best meat ever for soups, chili, and stews. The outside of the meat is called the bark. You get a splinter or bitten by this bark. The cheeks are so delicious and tender. 😋 Everyone has their own favorite pieces and types of bbq sauce.

2:54 No one needs to die over trying BBQ. American Airlines and British Airways have direct flights between Dallas and London; 9 hours. You could even slap a video together of the trip and food tasting. The trip might pay for itself.

The outside is the bark. You can do this at home if you cook in the oven at low temperature for several hours. Not the same smoke flavor, but the same tenderness.

Home bbq's cover ribs, steaks, burgers, hot dogs, sausage, kielbasa, grilled eggplant, zucchini, whole peppers and onions, salmon and shrimp tooo and chicken. Chicken legs and thighs, chicken breast on the bone and marinated cutlets off the bone, grilled chicken in something close to home made Italian dressing, beer can chicken, where you pour out a quarter of the can add smashed garlic cloves & herbs whether dried oregano and basil or fresh rosemary & thyme. You oil and salt and pepper the chicken then slide it over the can and sit it on one side of the grill with a pan beneath the grill while keeping the coals or flame to one side, it's called offset grilling put the lid over the grill and turn them every 15 minutes until done, turn, as in spin, it does not lie flat. You vent the lid on the opposite side of the heat source so the air flows across it. You can also use a can of lemon/lime soda. 5he chicken comes out crispy and golden on the outside and silky, tender and juicy on the inside. You can roast one or however many the grill can hold on one side. You're missing out on grilled chicken.😅

Pork cheeks are known as guanciale in Italy and highly valued as the correct meat for Amatriciana and other famous sauces. Because it's hard to get in the US and sometimes even in Italy I've read, pancetta is often substituted but the taste is different. Those round things you thought were cheese balls were hush puppies, no doubt. Hush puppies are corn meal seasoned with onions and sometimes even jalapeños and sometimes sweetened with some sugar (and sometimes not--there's a real dividing line between people preferring sweeter hush puppies and those preferring them more savory), then deep fried.

What you call barbecue in England/Britain is actually called grilling. Hamburgers hotdogs, chicken placed on a rack for a short period of time is called grilling. Barbecuing takes longer- a half a day- to a day or more depending on the meat that you're cooking

Good to see the distinction between Memphis and West Tennessee BBQ. West Tennessee whole hog BBQ is extremely popular in Nashville because of Martin's bbq. The owner of Martin's BBQ was taught to cook bbq whole hog in western Tennessee and gives credit to that section of the state on his website and in his menus. He learned in an area known as Jack's Creek if I remember correctly. I didnt hear him mention Saint Louis, Missouri style BBQ. If you grow up anywhere in the upper south, you grow up eating multiple styles of bbq without realizing it.

I live in Texas but my favorite BBQ joint is actually Bono's Pit BBQ in Jacksonville, Florida. I just prefer that "Carolina" style with vinegar/mustard based sauce.

I was raised in eastern North Carolina on hickory-smoked pit-roasted whole-hog pulled barbeque served with a vinegar and pepper sauce with sweet coleslaw and sweet hushpuppies as sides. Umm mm! Pass the Texas Pete!

Hi Thurs! The narrator of the video mentioned the type of wood used to cook the meat. This is critical and can make a large difference in the taste of the meat. For instance, in Texas they use a lot of Mesquite wood, and I can't stand that flavor. Here in Louisville, KY which is the bourbon capital of the world there is a company that takes the oak wood barrels the bourbon is aged in and shreds them into pieces. This is the wood I use when I smoke meat. I do love a good smoked chicken. Hard to do because you can easily overcook the bird. When I smoke chicken I check for how easily to legs move when I test them on the smoker. Once they are loose I take them out and the entire bird falls into pieces. Damn Good! When you do come to to the US you must make yourself try every food you can get even if you don't like it in the UK. Also prepare yourself for multiple foodgasms.

You realize that Bobby hill became a Japanese fusion chef. He specializes in a form of grilled meat over charcoal although his dad might have switched everything to propane. He’s also only 21 and owns his own restaurant. That’s a good kid just he needs a little guidance once in a while.

What you guys do in the U.K. is called grilling here in the USA 🇺🇸 😄 😉. Barbecue is a slow process. We do both. Sometimes, at the same time. Burgers and hot dogs is not BBQ. We do grill burgers 🍔 😋, hot dogs 🌭, chicken, sausages, shrimp 🍤, corn on the cob, vegetables, ribs, and steaks. However, BBQ is different. It is a slow process with bigger cuts of meat with spices, rubs, and sauces. It takes hours and/or days to cook. BBQ tends to be done in warmer climates/states because it'd one outdoors. Grilling can be done anywhere ( including indoors). BBQ will usually be accompanied with a type BBQ sauce (tomatoe, vinegar, or white). Grilling does not require a sauce. Fun Fact: The word Barbacoa is a native Indian word and cooking style that the Taino Indians gave to the world. It's a cooking method they invented from the Caribbean. The Tainos were mostly from Puerto Rico 🇵🇷.

They are also called BBQs in the northern parts of the country. Burgers, hotdogs, ribs, beans (more along the line of baked beans), chicken are all BBQ meat in the north US. It's often called a BBQ if lots of people are coming over. No smoked meats involved most of the time. Only the South and Texas says it's only BBQ if it's smoked. They get to call it what they want. If they are cooking hamburgers and hot dogs, well it could very well be a cookout to them. The dictionary will give the two definitions of Barbeque. So, don't get stuck on BBQ just being smoked meat. It's not that everywhere.

We do hash here in SC. Its more mustard base where I am from but the western side of the state is tomato base. We do gator and shrimp and other seafood too but I am right on the coast and its all fresh. Same with the other house I have on the Gulf in AL see seafood there too but its all locally fresh caught stuff. I have seen Brunswick stew served before too but the hash is probably more common. Pork and chicken is most common but you will see beef, turkey and all too. Most the larger farms though are raising pork, or poultry in the area imagine that is probably why those meats are most common. There is cattle farms but you see a whole lot more turkey, chicken, or pigs.

Ive Been lucky enough to try all these styles and they are all delicious! I hope you get a chance to come and taste what really is the flavors of the world fused together in unique flavor profiles that you will never forget !!!! Bbq is a religious experience here and is taken very seriously . Our swine is divine , sublime, and right on time ! We cook it from the rooter to the tooter !

If you’re at a good bbq place you’ll have a decent selection of sauces, many places even have multiple styles regardless of region. You’ll be able to sample different sauces as you eat but as bbq purists will say, good bbq doesn’t need sauce, trust me, if you get it done properly your mouth will water so much that you won’t miss it.

make no mistake, thurston. the average american bbq you go to will not have all this crazy delicious stuff, but instead just burgers, and hotdogs. sometimes theyll throw in steaks or sausages but normally its just burgers and hot dogs. dont think that every household has the crazy amount of time and passion it requires to make any of these beauties. i will say though that to kind of contradict myself, boston butts, and briskets are kinda common among middle class homes.

He said Memphis barbecue in West Tennessee barbecue as if Memphis isn't the westernmost city in Tennessee. Leaving out Nashville Style Barbecue, and Knoxville style barbecue. Nashville Style uses a more mustard-based sauce.

I live in Virginia and I can tell you that our BBQ isn't as good as most other states. We're not even in the same galaxy as Texas. Not even the same galaxy as North Carolina. Those weren't cheese balls, they were hushpuppies. You've really got to try them sometime!

If your using gas or electric you are grilling not BBQ . If you use wood , charcoal or now wood pellets you are barbecuing or smoking .

I would guess that those round balls in the North Carolina barbecue plate are " hush puppies " which are corn meal balls usually with onion and other spices . You seem to be confused about the distinction between barbecueing and grilling . What you do in England is grilling , not barbecue .. Grilling is what millions of Americans do in their back yards or on their decks to burgers and hot dogs . Barbecue is a more complex operation .

Lav, Gammon is an old English word for Ham. It is funny how many Brits let these old words fade into disuse but this one has hung on for a very long time. All of these are BBQ sauces. Burgers & hot dogs aren't BBQ. Sorry.

I only seen grilled hamburgers and hot dogs in America in the Upper Midwest. I don’t think they have a BBQ tradition save for Chicago’s aquarium style and even that is really from the south.

Burgers and hot dogs, even tho they can be made BBQ style, are not really BBQ'ing, but is grilling! and cooking something on the grill is Not the same as cooking BBQ! they are 2 different things!

i can't accept this video, They mention western NC BBQ as the only entry to the state. Eastern NC is one of the signature dishes. It is one of the most unique styles relying an vinegar and peppers, no sugar component. They mention all the variations on a sugary sauces and leave out the one that is truly different. Really they is Eastern NC, Tennessee style Western NC is pretty much the same as TN, South Carolina Mustard sauce, And Texas Dry rubs. All of the rest are just relabeled versions of those 4. There is the Alabama White, but I am convinced it isn't real, because my alabama relatives want us to bring some NC BB with use and seem to be ashamed of Alabama BBQ. For me NC is the best with Tennessee and Texas being pretty good alternatives on occasion.

There aren't crocodiles in the Carolinas lol. In fact, they're endangered in the US and are mainly in the Everglades. But there are millions of alligators. I notice that he keeps referring to the alligators as crocodiles in a bunch of videos.

You know the video was literally describing a type of bbq sauce when you said you could only eat bbq with bbq sauce. There are loads of different bbq sauces. It isn't just one thing.

Most of California bbq is made Texas style. It's rare to have bbq burrito style.

Dude, there is no such single thing, really, as "Barbecue sauce". Every one of these regions has its own style of sauce which they call "Barbecue sauce". The mustard-based sauce of South Carolina is "barbecue sauce" there. What you know as "barbecue sauce, though, is probably most similar to the tomato-based sauce of western North Carolina or Tennessee (Memphis). My own preference is eastern North Carolina sauce which is mostly vinegar, sugar (sometimes brown) and hot red pepper.

IDK if you're looking for something "New" to take a look at and react to. But if so, take a peek at "Waffle House - The Roman Colosseum of the South" by The Fat Files. It's one of America's most beloved chain restaurants/diners that is beyond amazing in it's ability to stay functioning in the most extreme Weather disasters . I really wish they'd open some Waffle Houses Closer to me, because there is nothing better than stopping by a Waffle House when I'm in the southern states at any time of day and having that "diner" experience where the cook (who you get to know if you're in the south) makes your food just the way you want it.

Sorry, what you do in the UK is NOT BARBECUE. Burgers and hot dogs on a charcoal or propane grill in the backyard is a "Cook out".

Perhaps reactors will move on to foods other than BBQ in 2025 and locations other than the South (especially TX). You guys have spent entirely too much time on this food type and region.
