I'm confused. Most places tell you that you should NOT use high heat to preheat a cast iron skillet, especially enameled.

You get a lot more even browning with a little neutral oil or tallow.

After searching for how to sear a steak in a le creuset pan, this is the second video in a row where it sounded more like an informercial for le creuset products and gave no ingredients, step by step instructions, temperature settings, how long for each step, anything on how to actually prepare the steak properly. Pointless

Cut into that steak! The First video I saw was on Le Crueset's channel and I'm trying not to ruin my expensive pan. No mention of the temp to which the steak was cooked, not enough about timing ingredient amounts....

Use lots of fat; a 50/50 mixture of butter and peanut oil works well, as does clarified butter/ghee.

That is hardly what I would call a “perfectly seared steak”. It’s burnt on the edges and white in the middle. Terrible video

No temperatures, timings or indeed any useful information whatsoever.

You wouldn't want that steak anyways, looks terrible. Just sear over high heat for 4 minutes, flip it and add butter, sear another 4 minutes while basting the steak. Then flip and finish as needed - generally 3 more minutes for 11 minutes total lands you at a nice medium rare. No oven.

@@rdobey An idiot might leave the pan on too long and too hot, and then complain when his house burns down. Le Creuset could then respond, "Well, we told you not to do it." But in the real world, careful cooks know that high heat is the secret to a good crust and no sticking.

Haven't even used mine yet but the instructions are to never go above medium with them because the enamel holds a lot of heat... Awful video.
