+Lauren Kellohen There are different types of molasses - blackstrap, unsulfered, etc. and some are darker than others. My dough tends to be darker than the video as well because I use unsulfered molasses. It should still work at taste great! I also roll mine differently. To avoid adding more flour into the dough, I roll between parchment paper and then stick that into the freezer. After 20 minutes, they are cold and ready for cutting.

I use the Americas Test Kitchen recipe. But any gingerbread dough is difficult because of the molasses. Worth it though!
