The tips are delicious! Also, if you put a cloth liner on the trays, you can pulse the scapes in your food processor to shred them and put the shreds on your lined trays. They will dry much better and more quickly if you shred those tough "skins". Then, powder the dried product as needed. I dry about seven bushels a year, and that's the best way that I've found. Next year, I'll use my new freeze dryer and save some labor.

Very nice. I freeze mine; Chopped up after washing and thoroughly drying. A medium freezer bag. Easily available when cooking. I use anywhere I would normally use garlic. It’s nice to have early in the season, while awaiting your garlic to be harvested and cured.

I have a mountain of scapes like yours that I just removed today. I was going to make pesto but I have to get more planting done, more sweet corn, swedish brown beans, melons, etc. I have an Excalibur dehydrator that does a great job. I didn't even think of dehydrating the scapes. I will make the time to follow your advice. Garlic is an absolute staple in my home. Thank you.

Maybe you could chop them up finer to dry so they take less time, since you ended up using parchment paper anyway!

Just seeing this video now....tried doing this before I watched. I didnt cut mine up...started at 95° then raised to 120°. Mine are turning a brown green. Did I ruin them?

Hi. Sorry they didn"t turn out as expected. Probably the only way to know if they are ruined is to grind them and see what it tastes like. I am worried they may have burned a bit. If they are not all brown, maybe you can pick out the brown pieces.

Can you use parchment paper to put them on ? OR can you blend them in a food processor ( or whatever you have) and then use the chopped up scapes?

Hi. I just made some garlic scape salt (I did post a video) and thats what I did. I chopped the fresh scapes in a food processor added salt(you can skip that part if you just want powder) and dried in the oven on parchment paper. I am assuming if it is not fine enough you could process again once dry until you get the desired consistency. I have not tried it this way just so you know. But the salt is pretty close to this. If you do let me know how it goes!
