This was so nice. It brought a tear to my eye. My off the boat parents used to make sauce every year. My father passed away a couple of years ago and I recently had the last of his jars. I am in the process of making sauce right now using the tomatoes from my garden...not quite 600 lbs (holy crap you guys are beasts). I called my mother for some tips but I also wanted some additional instruction in case my mother missed something. Interesting thing you did with turning jars upside down. My father never did that and he rarely had any jars go bad. The one or two that may have gone bad was probably because he used to reuse the seals after doing his inspection of the old seals...the Italian way is to try to save as much as you can :). My gran used to do this every year with my uncle but now no one in the family does she has long passed .. I sure miss those tomatoes..nothing better. So much work for one person.

You can compost it, otherwise its just tossed.

Certainly wouldn't use Iodized salt 🤦 I recommend Celtic, Red, or Himalayan salt.

Whoa,this is not, as advertised, jarring tomatoes, it’s. Asking passata. Different altogether. I want to can whole plum tomatoes.
