Chinese is not a language, but a language family. Cantonese Hokkien Shanghainese Hakka... etc, they're different languages from Mandarin. The difference between Chinese languages is way larger than between most of the Romance/Slavic/Germanic languages.

the language/dialect question is more political than linguistic. Whatever Chinese topolect (方言) you choose to learn, it will give you a lot of sinitic vocabulary in Korean/Japanese/Vietnamese.
