Jack, thank you for your question! I like them only because they are the pointiest brushes I have, all the other ones in my collection have more rounded tips, so it's hard to get sharp details with them. Chinese brushes are also designed to hold a lot of paint and water, so you don't have to load them quite as often. If you areshopping for those, they are called "calligraphy brushes" on Amazon, take a look at something similar to these www.amazon.com/dp/B075KHTLNR/ref=cm_sw_em_r_mt_dp_U_56JKEbBERWSGV . The main problem with selecting these brushes is shedding, so make sure to check the reviews!

Jack, the whole painting was done in about an hour. The longest time was to wait for the watercolor ground to dry because Daniel Smith recommends at least 24 hours dry time.
