Maybe I missed part one. Are these freestanding or do they interact with a “competing” console on the network? I assume you control the same lights from both places.

That is the fun part - they have a lot of options, so they can be freestanding OR they can trigger a console OR they can work alongside a console. So depending on your exact use case and needs, they can be programmed to do different things.

Our current wall switch only has certain scenes programmed in. I would be very interested in how to record a scene into the wall switch.

That's going to depend on what system it is, they are all different. :) Some are simple, some are not :(
