All quickbreads batter and dough should be left lumpy; especially cornbread. No one should have to eat a flat cornbread.

Adding an acid to quick breads really makes them rise. I’ve even used a tsp of vinegar added to a boxed biscuit mix and got a good rise. Most successful has been using 1/2 buttermilk for the liquid. Super fluffy results for pancakes and biscuits.

@@donnacreamer4123 That was my question and you nailed it. I want to use buttermilk, because it makes biscuits & cakes tender. Using buttermilk would eliminate vinegar unless you are changing milk to a buttermilk. Nothing like real buttermilk though. ❤️

For the life of me I can't make lumpy batter. I add a lot of baking powder and use a blini pan and I get super tall small pancakes. Even using a griddle my pancakes come out as tall as these. One day I'll master the lumpy batter but until then baking powder is my friend

@@evelgreytarot8401 umm no? I'm wondering how much baking powder you think I'm adding. I make maybe 80-100 3-inch pancakes and use a little more than 1/3 cup of baking powder. It's a good recipe, whenever someone new tries it they inevitably ask for the recipe.

Personally I don't like pancakes that are that thick. I mix in a little brown sugar and cinnamon and 1 egg, water till the batter streams off of a fork but still has enough surface tension to cling between the fork tines. I cook on a lightly oiled stove top cast iron griddle over medium heat. Flip when the bubbles stop closing back up or browning is visible around the edge. Take off when that side is brown. This produces a pancake that has lots of tube like structures in it that holds onto butter and syrup when they soak into the pancake.
