I saw in an interview that he was a kung fun teacher before he was an actor. I think this is why his moves seem so natural, and not rehearsed. Great fighter.

Yes, and he is showing the edict of Lee Hoi San, or in this case, Loi Lau Hoi Sung. Loi Lau- This means to "engage the enemy, stay with them and form a bridge with the attack, intercepting the path it takes." Hoi Sung- This means to "take advantage of their errors, following their mass of center when they withdraw, attacking the opponent without worries. These are very important points in wing chun and seems that they aren't taught in most schools.

He was a disciple of Yip Man, so his Wing Chun is authentic.

Great combat! Very interesting yat fuk yi technique, and very good stomp kicks. I find very effective the way uses to trap his opponent arms, and how he blocks high kicks, hitting the supporting leg. In this way it is possible to break easily the knee of your opponent, with a single move (stomp kick). Nice applications of the basic Wing Chun principles! Lee Hoy San is a great martial artist.
