instead of coconut milk, we use either powdered milk or evaporated milk on champorado. you can eat champorado without dried fish, if you don't like it. but many Filipinos like me like the combination of champorado and dried fish.

At first, it would feel like something is off cause its sweet then salty but as soon as you eat it, it is sooo gooodd. this kind of thing is strange for east asian and even for other southeast asians because it’s not asian to begin with,the dish originated from the mexican champorado brought by the aztecs and mexicans who lived in the Philippines during the spanish period. The rice was to substitute for masa hence the filipino champorado we have today.

I’m a Filipina but I don’t pair champorado (cocoa based rice porridge) with dried fish. It depends on your preference. Some people love to pair it with meats/fish. I also remove the skin/scale if it was that kind of dried fish.
