We learn by trial and error too when it comes from cooking. Great way to use leftovers.

I love this! I love making a roast (pork or beef) or whole chicken on Sunday when I have time and then making them over. Not only is it a great way to reuse food, it makes for quick and easy weeknight meals. And OMG....you're giving a new meaning to "just throw in some boullion." 😂

When I have any leftover roast beef or carnitas I make several next day dishes. Beef/pork curry; tacos for days; potato hash; stuffed peppers; ramen, etc. Never gets old. Loved this recipe and demo, Jocelyn. 👍 Looks perfect.

Tubed tomato paste is LIFE. We make small batches of homemade BBQ sauce with it.

5:42 I love that you didn't edit it out. Because that's me! I'm always goofing up in the kitchen. I have about 1 lb of chuck roast left over from a crockpot pot roast recipe, so I'm making beef stew and I picked you!

Always loved having beef stew in the cold weather season. My mom would traditionally add bay leaves to the stew. Stew offers so many options for different ingredients.

I was out of bay leaves. But using herb de Provence eliminates the need, imo But yes, the glory of stew is that it can be anything you need it to be.

Jocelyn, do you ever use red vermouth in your cooking? I hear it adds a lot of flavor, but not sure what dishes to put it in.

I haven't used sweet vermouth but I do sub dry vermouth for sherry occasionally in seafood dishes. I imagine sweet would be a hood addition in marinara and tomato based things to contrast the acid.

Going back to the 70's to 90's my Nan (Grandmother) would when doing a beef roast would save the fat juice and use it for the gravy to flavour it and collect it in a bowl which would solidify to use the next day or so. Which looks some what similar. Mind you my dad said when growing up he was often given beef that had turned green.
