Another great video. Do the berries contribute any fermentable sugars and if so any idea how to calculate? Great video. Using cider instead of water is a great idea. There are few orchards near us
@DointheMost Жыл бұрын
The berries absolutely do, that should come in around 1.04 to 1.05. That’s why I wait a few hours before taking a gravity reading, so I know that everything’s kind of mixed together. So the sugars from the berries, the apple juice, and the honey all combine to hit that 1.074-ish number.

Is that 1tsp sugar into a 12 oz bottle or different sizes? I've been told 3/4 tsp sugar per 12 oz bottle. If it's 12 oz bottles, how's the carbonation? Is it a lot or good?
@DointheMost Жыл бұрын
12 ounce bottle. I should’ve made that more clear. For bottle conditioning like this I’ve always used a teaspoon and after about 5 to 6 weeks of conditioning it ends up being perfect (for a lazy estimation.)

Thank you for the recipe. I am a huge fan of your hydromels. I brewed many (maybe all of them?) and was never disappointed. I am going to try it out, I will upscale to 3 gal tho: blackberries are my favorite fruits to ferment. For non-beginners, what yeast would you recommend? I have 71B and RC212 that could possible fit. Unless you have other suggestions?
@DointheMost Жыл бұрын
I would go with RC212 since there’s apple juice in here - 71B will gobble up some of the malic acid and potentially change the flavor profile too much. Cheers!

Great video! I’m a fan of fruited cysers. This one definitely is going on my to-brew list. For the metric folks out there that feel a bit iffy about bottle size and how much priming sugar to add: I’ve looked up how many grams per litre to add. Here’s what I found. For champagne-like carbonation, the website I found recommends 16 grams per litre of liquid. True champagne makers will go as high as 24 grams per litre but that can cause your cyser to literally geyser out of the bottle. 16 grams per litre ’ll yield a strongly carbonated beverage. I usually go a bit less: 12-14 grams per litre, and for lighter carbonation I’ll even go as low as 10 grams per litre, which is more petillant than sparkling. As soon as the blackberries have ripened in the forests and hedges where I live I’m off picking free fruit for this cyser and for a few other blackberry brews I have on my wish list. Happy brewing!
