dutchy here! this is what we call crustless cheese, its supposed to be soft and a little hole-ey like that! we usually eat it in thin slices on our bread :) If you google "korstloze kaas" you will find some pictures! the name leiden is from a village in the netherlands called Leiden :)

Funny enough, a similar thing happens to my bread when I bake it with cumin seeds. I wonder if cumin has chemical properties which react with products in a way other than just flavour?

Greetings from the Netherlands, the cheese looks good to me, we also call it 'komijnekaas'. You can let the cheese mature for 1 year or even longer, on fresh white toast is so delicious. Love you're video's

hi Gavin I live in the USA in Oklahoma as you know we do weird things with cheese here in Oklahoma if you ever get a chance take a slice of sharp cheddar and place it on top of a piece of apple pie allow it to melt slowly and then enjoy cuz it is amazing

you said it smelt bready, which means that you mostly likely had some yeasts leftover on the cumin seeds~ But it's honestly probably better soft like that..

I notice that some of the cheeses leave a fair amount of residue on the wax. Is it still possible to re-use the wax or is that a negative to re-using? Looks rubbery and soft almost like mozzarella.

This one certainly did. I had to throw this wax away. Normally, I reuse the wax. I just wash it off with warm soapy water and pat dry with paper towel. Then put it back in the wax pot for next time I need it.

when you say cumin do you mean carraway seed?

Cumin is different. Carraway is often used in rye breads. Cumin is a dominant spice in Indian, Middle eastern, and Mexican foods. It has a similar shape to carraway, but smaller in size, and a completely different flavor.

this is Jong cheese. we also have old leidsche kaas. that is hard and much better than gouda.

That makes sense because Spice Leden is the hardest cheese I know of, which is another reason I like it. I even lay it out in slices to dry and make it harder because to me it makes the taste stronger. I've never seen it soft like that. That is softer than Gouda Lekker. I like the idea of making it if I could get it to turn out hard like I buy from the Dutch store.
