The Bloomy Goat Blue is a personal creation that turned out to be one of the most amazing goat cheese I've ever made! It is made in the Valençay style but without the pyramid mould and with the addition of P. Roqueforti.
Ingredients list:
4L (4 qts) Goats Milk
1/4th teaspoon Aromatic Mesophilic Culture; goo.gl/7QtRhd
1/8th teaspoon Penicillium Candidum; goo.gl/e9S44E
1/64th teaspoon Geotrichum Candidum; goo.gl/bSmNt1
1/64th teaspoon Penicillium Roqueforti (mild); goo.gl/EjWURv
1.25 ml (1/4 tsp) Calcium Chloride in 1/4 cup water; goo.gl/xmcCjv
1.25 ml (1/4 tsp) Liquid Rennet in 1/4 cup water; goo.gl/HrSPJu

Non-iodised fine cheese salt; goo.gl/Bj2t2a
