Made a mead from four jars of the cheapest Aldi runny honey, wasn’t expecting it to be fantastic but it turned out wonderful. 👍

Blimey this sounds good. A panacea for all winter sniffs and coughs. I'll be making this soon, ready for the colder months. I have a mead on the go now. You have to love mead for its simplicity and flavour.

I agree with using the more affordable honey. I've made fantastic mead with big store honey.

Is there any reason I shouldn't add the lemon to the ginger tea while its steeping? I tend to do this when making a ginger wine and I like how that comes out. Thanks in advance. I've learned so much from your videos.

Speaking of meads, have you made a braggot? I recently got a bag of dry malt extract and added some to a batch of apple wine. (It's still slowly bubbling away, a month now after I started it.) With the DME that remains, I plan on starting a braggot (about 2 to 1 honey to malt extract).

I remember having some really good mead once and my imagination was like I was eight years old again, I was having dreams but I was still awake. I think I've got to use raw honey and wild yeast to make that kind of mead, and age it a long time, maybe in barrels.

I absolutely agree with you about fermenting cheap honey vs expensive honey. Honey is 80-90% pure sugar anyway. If I have a mead that requires back-sweetening, *then* I'll use a better quality honey for flavour. I made a juniper mead (your recipe, thank you very much!) that I back-sweetened with about 150g of pine/fir-tree honey. Much cheaper than using 2kg of it and more or less the same effect.

What a great flavor for mead. Have you ever used herbs with your fruit in any meads? I’ve seen some flavors like blueberry basil in stuff like Kombucha

What's the role of temperature here? I'm in a hot country with AC that turns on and off. Beer is difficult - I thought mead might be a little better to try.

Hey james!!! Got a mead question im doin a gln. Batch banana and honey. Took a reading it was 1.158 4lb.honey 5lb. Banana boiled and strained.but within an hour or so it looks like it coagulated almost half the demijon of gel what it looks like.

Bananas are pretty bad at thickening up like that - expect a fair amount of sediment to be thrown. . . replace with a honey solution and it'll be worth it

*ingredients needed* ginger, lemon, 3 lb of honey.... *continues to talk about 2 lb for a dry mead and 4 lb for a really sweet mead.... says he wants a medium sweet mead and is gonna use 1.5 lbs..... hope u like extremely dry meads Came here to find a good recipe for a lemon ginger mead but found a lot wrong with how you do stuff...

Couple of questions about this recipe: Just wondering if you need to worry about the lemon pips getting into the mix when you're squeezing the lemon? I hear they can spoil the taste. I've just sieved mine so I hope that wasn't crucial. :P Secondly, I sieved out the ginger tea into a sterilised pan and then mixed the honey into the ginger tea, before I added it into the demijohn, so that I could pour it into the jars of honey so that I could get everything out of them. Extra delicious honey. :) Would this method have any adverse effects? Or would the result end up the same? Thanks!
