INGREDIENTS:
~ apricots without pits 110 g
~ eggs 4 pcs 220 g
~ sugar 150 g
~ lemon juice 55 g
~ zest of 1 lemon
~ butter 82% 100 g
~ flour 250 g
~ soda 1 tsp 6 g
COOKING
Blend the apricots until smooth. Add eggs, sugar, mix. Pour in lemon juice, add zest, mix. Pour in melted butter and mix. Sift flour together with baking powder and mix.
Place in a pan lined with parchment. Bake at 170 °C/340°F for 50 minutes -1 hour. If it browns ahead of time, cover with foil.
Check readiness with a toothpick.
Before serving, sprinkle the cooled pie with powdered sugar and garnish with mint.
