Lemon-Blueberry BREAKFAST CAKE ⭐ Streusel tender light FLUFFY

Coat 1 - 1.5 c frozen blueberries in 1 Tbsp flour, put back in the freezer until time to use them
Streusel Topping: 1/2 c flour, 3/4 c sugar, 1/4 c cold cubed butter
Batter:
1/4 c room t margarine or butter
1/4 c veg. oil
1 c sugar
pinch of salt
2 eggs
1 t vanilla extract
2/3 c milk
1/4 c lemon juice
zest of 1/2 lemon
2.5 c flour + 1 Tbsp optional if batter somewhat loose
1 heaping t each of baking soda and baking powder
