Looks good! Just a suggestion for more crispy skin since you went to the trouble to pull it back! Scrape the underside with a knife. You probably know that. Just my 2 cents. Great job as always!

Gentlemen, great video. The technique I use for crispy skin is to peel back the skin, and then scrape the subcutaneous fat layer off the underside. Works awesome. Have a great summer guys.

Looks great fellas! Have you ever tried doing thighs skin down on a cold, un-oiled griddle? If you cook it about 90% of the way on the skin side, then finish on the other side while basting, the skin turns out impossibly crispy. Anyway just throwing it out there, but those plates look delicious. Thanks guys
