I know this video is 2 years ago and just subscribed. I never made ricotta pie but made strudel and apple pie as well as cheesecake. Ricotta is lighter than cheesecake and not so dense. One problem I’ve always had is the pastry dough. I’m intimidated making pie dough cause it always comes out hard whether I make it by hand or use mixer with dough hook or food processor. I use these machines due to my rheumatoid arthritis in my hands. My late mother used half butter and half shortening. Also this dough you don’t need butter cold like when making apple pie which I like. I will just stick to your way and believe first time when following someones directions do it that way then second time substitute it your way that’s just my way of thinking. We are Southern European and speak Italian and Croatian. My mother made recipes like so. You bake like we bake. Just love this pie and going to make it today🥰

Dear Nada, Thank you for watching and subscribing. Growing up I lived in Hudson county NJ and our community was mostly italian and Croatian. All my high school friends were Croatian. 💕 my mom Too has rheumatoid arthritis and I understand the difficulty with the kneading dough. :(. You will love the pie crust, we call it pasta frolla and use it for all crusts including Easter pie Pastiera. Please let me know how it turns out. In the ricotta add a little orange zest too. 500 g of flour 200 g of sugar 200 g of butter Three eggs at room temperature Zest orange or lemon For one pie make half of the recipe. The other ass you could make cookies or eat it raw right out of the fridge lol.

Hello Alessandra and thank you so much for this wonderful recipe. I did follow it to a tee (twice) and although the cake itself was delicious, unlike yours that the pastry had cracked on top, mine remained intact on top but split on all sides exposing the cheesecake underneath. I did use my thumbs to seal it in properly. Do you poke the pastry with the fork all the way through? Please advise . I am determined to have my guests for a dinner party enjoy your delicious cheesecake. Thank you.

Thank you so so much!! I’m In Italy right now and just had the pie and a million memories flooding my heart. Yes I did do a video but only added the white custard. You can add a few table spoons of cocoa powder to vanilla custard and proceed with recipe. Below is the link. 💕💕💕

Alessandra, is this your Easter dessert? One of them, I should say. My grandmother always made ricotta pie at Easter, but it didn't have a top crust. I remember it being rather dry so I like your version with the crust on top. Thanks.

Hello there, Yes it’s one of the deserts. It’s my BIL ‘s favorite. Did you maybe mean pastiera with the wheat inside ? The grain pie sometimes called. I make about 30 of those. It’s everyone’s favorite. I do make a few different ones that we love. I’ll send the link.

God I adore Allesandra & her videos! I hope she knows she’s ☝️ of a very FEW on KZbin who makes AUTHENTIC Ricotta PIE (not even a cake but pie). A traditional Ricotta dessert should be with a pie crust NOT GRAHAM CRACKERS! I ask, what Momma in Italy goes out to the local farmer’s market in Calabria, and buys GRAHAM CRACKERS?!😂 Bottom line? Alessandra made an AUTHENTIC ORIGINAL ITALIAN RICOTTA CHEESE “PIE”, and it’s beautiful and….. The most delicious in all the 🌍. Thanks 🙏🏼 Girl 👧🏻!
