Today I would like to share with you my Ricotta pie recipe.

You bring tears to my eyes. Every Easter my father made these and delivered them to all of his brothers & sisters (7 in all). The whole family made them with him. Of course, he never wrote the recipe down so since his passing 28 years ago, I have never been able to duplicate his recipe. He added rice to his pies so I will be doing that as well! Grazie Pasquale, my nonna, Carmina Festa Martignetti, showed me how to prepare a dinner and dessert for Easter 60 years ago and I still do it her way for my ( children, grandchildren and great grandchildren. You got my juices flowing... my honey had to make another trip to the grocery store for ricotta! The pie just came out of the oven... will take it to my Daughters tomorrow. This is a first for this Irish girl! Now on to make the Greek spinach pie...

My mother used to add lemon rind and orange rind , and sprinkle cinnamon and sugar on top just before baking. Delicious 😋

Chef, do we drain the ricotta before making the filling, or doesn't it matter? My landlord's mother made this every year for Easter, and she was 103 years old. I never had the chance to see her make this. I love watching and learning from you! Thank you very much for sharing! Happy Easter!
